Our neighbors' sondied in his sleep last night. He was 39yo and had been ill all of his life, having been born with spina bifida. His death was unexpected as in no one thought it was imminent. He did far outlive his prognosis, which was initially one year, then 20 years tops. Sweet guy with a hard life.... Anyway, their daughter and her boyfriend just drove down (6 hrs) to be with the parents. Neighbors are all rallying to support the family. I'm taking dinner to them tomorrow night and they requested a cheese-based entree as dd is vegetarian. Any ideas for me? I'm going to make a large green salad with lots of veggies and cheese/nuts on the side and want to figure out the entree. Thank you! UPDATE Thanks for your suggestions. If you have time to weigh in, tell me what you think of this recipe I just found? Does it sound good to you? I make my mother's homemade mac & cheese. It's the old fashioned Better Homes and Gardens recipe from eons ago. Lasagne is a great option. I'm so sorry about your neighbor's son. May his memory be for a blessing.

I'd make it as is - mushrooms seem to be one of those things people love or hate.

I'd make it as is - mushrooms seem to be one of those things people love or hate. That and you run the risk of making it watery... or waterier depending on what you do with the spinach.

I am a lover of all things mushroom and cheese - but for this recipe I would leave the mushrooms out. The recipe looks great. Not sure if it needs the pesto if you don't have it.
