I took the day off for an eye appointment (long term issue, long drive to the big city) and am home and feeling kind of crappy. I think we're repeating last night's dinner with leftover roast beef, mashed potatoes, mashed carrots/turnip and gravy...unless dh has plans he hasn't shared! I'm in my pajamas and going to take a nap. akathy I hope you're feeling better. scrapmaven I hope your cold doesn't linger long. Thanks for filling in! This post and the daily birthday posts are the two I try not to miss every day!

Meeting tonight, so left overs are on the menu. I may have an Italian sausage sandwich, or some "Mexican rice" I made up last night. I added the rest of the seasoned ground turkey to it, so it's sort of Dirty Rice a la Mexico, I guess.
Have we had an update on Kathy this weekend? I've been offline.

Leftover Cheesy Hamburger Potato soup. I made it last night and it's sooo yummy. It's here moneysavingmom.com/2012/11/cheesy-hamburger-potato-soup.htmlI used ground turkey (always do), omitted the garlic since I can't eat it and I only had 2 potatoes and I didn't mix the cheddar in at the end. I like to put it on my bowl of soup after I've dished it up. More cheese that way and it melts as I eat it. YUM! Cheesy Hamburger Potato Soup Serves 8 INGREDIENTS: ¾ – 1 pound ground beef (or less ) 1 medium onion, finely chopped, or 2 teaspoon onion powder 2 cloves garlic, minced, or 1 teaspoon garlic powder 6-8 medium potatoes, peeled and cubed 2 carrots, peeled and chopped 2 teaspoon basil 1 teaspoon parsley 4 cups chicken or vegetable broth 2 cups milk 1/3 cup flour 1 cup shredded sharp cheddar cheese* ½ cup shredded parmesan cheese Salt and pepper to taste *If you use mild cheddar, you will need to use more of it to get the same amount of cheesy flavor. DIRECTIONS: In a medium-sized pot, combine the ground beef, onion, and garlic. Cook and stir until meat is no longer pink. Drain. Add the potatoes, carrots, basil, parsley and broth. Bring to a rolling boil. Reduce heat to medium low. Simmer, covered, for 15-20 minutes or until vegetables are tender. Combine milk and flour in a blender. Blend until smooth (this only takes a few seconds in my Vita-Mix). Gradually pour the mixture into the soup, stirring constantly. Cook and stir until soup is thickened and starting to boil. Add cheeses and continue cooking until cheese is melted (another minute or so). Add salt and pepper to taste. Ladle into bowls and sprinkle with additional cheese if desired. Note: This is a soup you don’t want to cook too long as the potatoes will start getting mushy

We don't have anymore news on akathy other than what peaname posted last week. Let's continue to keep kathy in our thoughts and prayers. KelleeM and marianne thank you so much for the kind wishes. It's just a silly cold. I'm watching crap television and cuddling w/a kitten. All is good.

I have a cold too, but no one cares about me. hmmph I have to go work in the 1st grade classroom shortly and give the cold back to/from whence it came. (Did any of that make sense?) Today may be the day I finally break out the frozen fish sticks and tater tots for dinner. I do have plans for some real cooking later in the week but there's too much going on today to get started. Unhappy update on last night's dinner: I don't think I can eat Betty Crocker potatoes anymore. They were way too salty. I hadn't made them in years but I used to love them. Can't even blame the ham for the saltiness, because I've always added ham. Love and good wishes to akathy.

I did a lot of cooking yesterday. I wont be home for dinner tonight but the family can most certainly finds something fabulous for dinner in the fridge!!
I made... pasta salad chicken curry salad zucchini muffins shepards pie
then for dinner we had
spaghetti garlic bread green salad
There is left overs of that too.

DS and I have our rescheduled meeting with the Senior photographer to finally order the darn pictures that were taken in August!! DH will eat some leftovers out of the fridge, and I imagine DS and I will grab something on the way home.

I picked up gnocchi at Trader Joes, with no clue what to do with it. I found a recipe on Pinterest for Gnocchi skillet with sausage and tomatoes, so that's what's for dinner, along with asparagus.

It's an exciting day today. There is a pork roast in my oven as we speak. My kids won't know what to do with themselves, we're having a real home cooked dinner. I'll probably add 5 minute fries. LOL They've been asking for those for awhile.
Our supermarket has these perfectly seasoned "porkette" roasts, it's boneless pork shoulder. On sale $1.99/lb. I love this stuff. I should get more for my freezer.

We're having what we call Nacho Pasta. It's basically jar Alfredo sauce w/pickled jalapeños, chopped tomatoes, sliced green onion, a pinch of red pepper flakes & topped w/mozzarella. Nothing fancy, but a fave.
