I have no clue. We still haven't fone carnitas tacos, so maybe that.
DB has a consult with his oncology team today at 4pm to see the results from yesterday's PET scan and decide on the next course of treatment, if any.
After that we may just go to Denny's. Lol

Ugh. We are having our Super Bowl party at work today, so I've had LOTS of snack-type items, and I'm STUFFED.
Leftovers to eat tonight, for anyone hungry. I doubt I will be.

I think I'm going to make Quiche Lorraine. Easy and fast! Maybe a salad too.

No clue if the recipe for tonight will be good or not, but the photos on the blog look pretty Sante Fe chicken and lentil casserole, which I think I'll serve with quinoa and roast veggies Can you link the chicken and lentil casserole recipe? Lentils are one of my favorite things on earth, and I'm always looking for new recipes! I will also be interested to hear your review after you've made it. I went out for Chinese for lunch and I'm not hungry at all. I might have a small salad later. I'm making turkey spaghetti for the kids. I also have Parmesan French bread in the bread maker. I'm a little obsessed with this new gadget. All the recipes sound so good, I'm making my way through the recipe booklet

Beef stroganoff over mashed potatoes. I know stroganoff is usually served over noodles, but I've got some potatoes to use up. I'll probably make some lemon pepper broccoli as a side. I would love to make beef stroganoff but I need a really good recipe. Nicks Mom? Anyone? I don't like how when I've tried making it before, the meat comes out kind of tough. I want it to be melt-in-your-mouth, and I'm just not that good with steak. I'm better with roasts.

I'm using leftover roast beef cut up into small bite-size chunks. D'oh! I should have thought of that. Lucy, I use round steak cut in bite size pieces. Shake pieces in seasoned flour and brown. Then 1 cup red wine, 1 cup beef stock, and spices like garlic, onion, salt pepper and simmer till tender. I add 1cup of sour cream right before I serve it over noodles. I also add more wine if needed if there is any left.

Gyoza is a Japanese dumpling. It has chicken, pork, shrimp or beef w/cabbage, carrot, onion, small micro-sized pieces of veggies. It's fried and yummy. I hope I described that sufficiently. Found some recipes -- these sound yummy! I am thinking these would be a great addition to our Super Bowl menu! I can get wonton wrappers at my regular grocery store, but I have a really good Asian market near me -- I'm guessing they would have the real gyoza wrappers?
As for tonight -- Thursday is our fast food night because I pick DS up at the library and we usually go eat right from there. I let him pick where we go, but I might gently push him toward something other than McDonald's tonight! He loves Subway so maybe that.
If you want to do what we do then go to your local(if you have one)Asian market and buy frozen gyoza. My favorite brand is Dai-lee, but it's hit or miss when you try to find it. I defrost it and fry it up. It's so easy.

@peasville , both you and your db are in my prayers. This thread is about dinner, but it's also about family and friends, too. So, let us walk w/you as you endure this worry. miominmio , I'm sorry you hurt your back. I must say that acupuncture is fantastic for injuries. If you've never tried it, can I suggest it? Feel better very soon. KelleeM , so glad you were able to see your precious little one. Wishing you fast healing to this nasty cold. The Birdhouse Lady, hope your dd feels much better by now.

I will add that Trader Joes has tasty frozen gyoza, and they sell dipping sauce too. I think they carry pork, chicken or shrimp. DH has allergies, so we do pork. They compare pretty well to what we ate in Japan.

We're having Boudin Clam Chowder, green salad and bread for DH/DS. And a tiny rectangle of Trader Joe's Dark Chocolate for dessert.

Today was a work day, so I made Spaghetti Bolognese last night. That way all I had to do tonight was , heat the sauce, cook the pasta, and throw together a salad. I had enough time to make these preparations and eat before DH and I headed out for a meeting at school. Now I am back home and in bed with my feet up.
