I'm so tired of dinner, coming up with ideas, cooking it, etc. I'm in a rut and need some new ideas I think. So what are you cooking these days? Any great, quick and easy recipes?

I am trying Linda~lou's White Castle burgers, the recipe is on the recipe board under mains.
Looks easy and she says it tastes great. I am taking her at her word, never having eaten a WC burger.

my garden is giving me lots of tomatoes and basil so I've been making pesto, salsa and bruschetta quite often. Tonight we're having enchiladas with fresh cilantro and salsa.

Let's see... I'm making quesadillas tonight. Those are super easy if you start with, say, leftover shredded rotisserie chicken (I usually buy a fried chicken breast for $2 and peel all the meat off of it). You can then just put chicken and cheese in a tortilla if you want (then fold it over and grill like a grilled cheese in the pan). I like to saute up peppers and onions, then add the chicken and just a sprinkle of taco seasoning. Serve with salsa and sour cream (and lettuce and guac). Love these lasagna cupcakes. Leftovers save well. Save yourself time and don't bother to cut down the wonton wrappers. This recipe for asian chicken and noodles was okay. I used a bunch of fresh veggies and next time I will go easy on the fettucine and add a LOT more veg. I really like cheeseburger mini pies. I put a little mayo, ketchup, raw onion, diced tomato, and lettuce on mine. I like this sesame cilantro chicken recipe as well. I normally make double the sauce, pour a little out onto the chicken and grill it on the foreman (careful not to cross-contaminate), then spoon sauce onto the chicken before serving. I like this with a side of rice. I also like to make a copycat of outback's alice springs chicken. It's not TOO time consuming, but I prefer to make it not on a weeknight. I've started writing a weekly menu - helps me so much. Each week I go shopping, and buy whatever looks good, then I check my Pinterest Board for ideas and write a menu.
Last night we had Mongolian Beef - I'd never made it before, it was quick and easy and 100% delicious. Both kids told me it was a keeper.

Do you grill? There are so many fast and popular meals you can make on a grill. Kabobs, chicken breasts or tenders, mixed veggies, various burgers, sea food, planked food. I always try to have extra meat leftover from grilling to use with salad greens for the next day as a hearty salad.
You could also try out some new variations on pasta salad, potato salad, taco salad.
Try a new nationality? I always come away with great ideas after going to the Asian farmer's market.

We had salmon with mango-avocado salsa and coconut rice the other. That was quick and easy.
Tonight is roast beef and roasted vegetables( swede, turnip, parsnip and carrots) and yorkshire pudding - easy but not especially quick
Later this week...
Monday - bbq chicken thighs with leftover roasted vegetables and mashed swede
Tuesday - DD is cooking pancakes and sausage
Wednesday - kabobs with cucumber-yoghurt salad and pita
Thursday - DS is cooking
Friday - Salmon bake with pecan crunch coating, couscous and carrots
Saturday - chili
