It's my lungs vs. me. Day 2. I will not go down w/o a fight, but I also won't be cooking dinner.  It's probably a sandwich night. What's on your menu? Have a great Friday in anticipation of a wonderful weekend.

Tonight is a crazy one. DS has the Powerbuff Volleyball tournament at 6pm. He will pick up "pre-dinner" on his way home from school, and then I think his team is headed to BW's after. DH and I have a funeral to attend - visitation 3-9, with the actual service at 7. I am leaving work at 3 and going to the funeral home, then will leave by 530 to get to the school for Powerbuff. DH will work his normal day, then head to the funeral home after, arriving around 515/530. I ordered Pita sandwiches, chips and cookies to be delivered to the funeral home for the immediate family of the deceased, and included dh and I in that. (It sounds rude, but it's actually not if you know the relationships involved!)

Trying a new recipe for mac & cheese tonite. We've tried a few and they're all good, but we're on the hunt for one that's totally yummy, but not 7000 steps and $40 worth of cheese (thank-you-very-much-Carnie-Wilson). Feel better, scrapmaven!

Steaks did not pan out yesterday, it was another leftover night. Which is ok by me (in case you forgot, I hate to cook). Don't know tonight. SO and I just texted Nachos and Margaritas. I think that sounds like a winner!

Yesterday DH went for a check up and his doctor lectured him about his weight. I wasn't there but I can picture it! She is a very feisty 100 lbs and she let him have it. Best part? He listened! So, it's a big salad for us tonight.

I've recently discovered that sweet potatoes are something that DS really likes, so I'm looking for new ways to prepare them.
I am thinking about making lentil-orzo soup with toasted garlic bread on the side.

White Bean Caldo Verde Soup for us with Whole Wheat Rolls. It's a recipe from the "Forks over Knives Recipe Book". I love this recipe because it's such a warm and soothing soup made with potato and kale although I like to substitute chard for the kale. It snowed last night so we're staying in tonight and it's a perfect night for soup.

Fish day Friday. More Costco roasted garlic Ahi. It's delicious, so I don't mind the repeats once a week. Two pieces left after tonight. I'll have leftover roasted asparagus and German potato salad to round out the meal.

I am undecided, but leaning towards ginger soy cod on rice. The dreaded man cold seems to have hit here, and I'm trying to keep nasal passages clear. Ginger should help!

Our church is hosting an international supper tonight. Everyone is supposed to bring a dish or two.
I'm making coconut chicken curry, crusty bread and spanakopita bites. I'm really looking forward to the fellowship with my church family.

I melt a little butter and mix in some maple syrup and drizzle over sweet potato cubes then toss to coat. Sprinkle a little salt and pepper, and that's all there is to it. I'm glad your ds has discovered what my family has known for a long time.....sweet potatoes are delicious! Oh, and if you eat a lot of them, your skin develops and orange tint.

Happy anniversary. nepean. Feel better soon, scrapmaven . I made salmon with a lemon and pepper marinade, and we had leftover rice from two days ago. Added cream cheese, lentils and cashew nuts, amd it tasted good! And some cherry tomatoes too.

Because I know all of you have been losing sleep wondering when the 2016 Valentine's Day Dessert Standoff would end  ... I am happy to report that it ended peacefully last night!  (The cookie jar went empty a few days ago, but I held off refilling it until the dessert was gone too.  ) The cookie jar now is filled with peanut butter oatmeal sandwich cookies and the cake keeper with a milk chocolate chunk & toffee bits brownie (baked in a round pan) covered with milk chocolate ganache.

Fish Fry Friday. My husband and son LOVE my breaded fish. Let me be honest....I love it too! Until my house smells like fish for 3 days  Anyway I have 2.5 pounds of Cod to be breading and frying tonight. I will serve it with brussel sprouts, and some noodle dish. Seeing how I am on Weight Watchers, I will be eating a side salad and a piece of fish! No noodles for me!!
