Today I'll be using the roast chicken from Costco and making a chicken and rice soup. Dh loves the flavor that the Costco roast chicken adds to the soup.

We're having Beef Goulash (minus the potatoes) on noodles, roasted green and white cauliflower, steamed carrots and corn, apple-cranberry sauce, Italian bread, and cookies, molasses crinkles, for dessert.

We might have Tball practice tonight. We're supposed to get a winter storm starting later today. High winds, lots of rain, possible thunderstorm. If we have baseball, I'll make ham and cheese sandwiches. If no baseball, we will have spaghetti. First game is Friday night, but if we get as much rain as they think we will the game will most likely be canceled I'll have a bummed out 6 year old!

This afternoon I have to make the trek into Anchorage for an appointment. I think after I will hit Costco before heading home. You know what that means as far as dinner goes....A whole Costco Chicken and a Cesar Salad!!

It's baked egg rolls and garlic sesame noodles for us. DD pointed out that we always seem to have this meal on a Wednesday. I have no idea why. It just happens.

We finally have some sunshine, no rain and decent temps! So I'm grilling steak, cabbage steaks, grilled green beans with onions, bacon & garlic, and I told the kids I'd make them some mac and cheese to have with it.

I think we're going to have the baked macaroni and cheese leftovers from Monday night. And either broccoli or maybe green beans to go with it. Not very exciting, but it will get some stuff cleared out of the fridge.

It needs to be said. I love reading everyone's little updates about their life and their food. I got the boys Subway last night because they did not want taco Tues. I decided to go to a movie by myself, so I ate popcorn. I tried to get one/both to come, but they were uninterested. Tonight, I will fix burgers in a skillet with pepper jack cheese for them. I am not sure what the sides will be. Maybe baked beans and chips. Lisa

I'm trying out this recipe for Spinach Artichoke pasta bake but I'm also adding grilled chicken to it that I have marinating right now. drizzlemeskinny.com/spinach-and-artichoke-pasta-bake/I made a caprese salad to go with it. Cucumber, Roma tomatoes, fresh buffalo mozzerlla tossed with a light vinaigrette and some Italian herbs.

I'm trying another new recipe tonight, Smoky Chickpea, Red Lentil & Vegetable Soup. Instead of additional veggies, I added chopped fresh spinach. We'll have a mixed green salad and grilled sour dough bread to go with. It smells delish - I'm definitely ready for dinner! Lol and great minds BarbaraUK it was delicious LOL! It's ages since we had fish and chips from the chip shop, I'd almost forgotten how good they are. Much easier than making them today and we really enjoyed them. Just hoping it isn't long before the weather turns warmer so that we can go to the beach and have fish and chips sitting on the sea wall watching the ocean.......they really do taste good then!

The low fat potato soup I made last night (using greek yogurt in place of heavy cream) came out surprisingly well. I used a Tuscany Chicken broth as a base and I think that added a lot of flavor. We both enjoyed it. DH had a great check up with his surgeon today and was given the ok to try one new food a day to see how his system handles it. His choice? English muffins with grape jelly. I'll be having a flat bread veggie pizza.

Dh is feeling like crap today so I had to take MIL to her doctor appointment ... that would be the day he would do the same for me and my Mum ... but I'm a SAHM and a good wife He is apparently healthy enough to eat though I'm making chicken piccata on noodles with a tossed salad
