Today is busy Monday. So, dinner will be something easy like tacos. After Monday late afternoon acupuncture I pour myself into the car and try not to kill the relaxation buzz.
What's on your menu?

Dh is taking MIL to a doctor's appointment this afternoon and then probably bringing her over here for dinner ... it depends on how tired she is ... I'm making chicken enchiladas and Spanish rice ... MIL has never had them so we'll see how that goes ... she's a foodie so I think we'll be OK The dd's hate enchiladas ... of course ... so they are fending for themselves

Well I left chicken thighs in a pan in the fridge for DS to put in the oven later so it'll be chicken thighs with veggies and maybe potatoes
BUT DD comes home today ( which is why I need DS to start the dinner ) I'm so happy!!!

We're having dal over brown rice, and I have fresh green beans that I'll steam to go along side. Maybe cantaloupe chunks, too.

I'm going to respond on today's thread for what we had last night (hope I'm not violating any non written rules ) I made Pioneer Woman's Cashew chicken, and served it over rice. It was really quite tasty. I don't cook often with chicken thighs, and it took me a while to skin/bone them all but it was well worth it!

Fiskegrateng.....which DD9 was super happy about (and MIL will be too, when DH brings her the leftovers later tonight). I don't like fish (I think I have complained about that before) so tomorrow's dinner will be whatever I can come up with that is either vegetarian or has chicken in it.

I have a pound of ground beef that needs to be either used or frozen today. So hopefully, something with that. So many choices, but if I'm lazy and/or can't decide, it will be my old fallback chili rice.

Dh is having his favorite, Chinese pie. I'm having yummy food...ziti with chicken and broccoli in a butter/olive oil/wine sauce with lots of garlic!!! Have I ever mentioned that Dh hates garlic? It's very sad. I'm very excited for my dinner which I made yesterday.

I'm marinating a pork loin in some soy sauce, honey, garlic and chili flakes. I'll probably bake some potatoes to go along with it and have a kale salad.

Though I also have some chicken breasts in the fridge that I need to make into Schnitzel, and if I don't do it today I can't make them till Wednesday. Mmmmm........ I need to find some energy and get the job done!

Your dh would hate my cooking because I loooove garlic and usually put in about three times as much as a recipe calls for (if it is garlic cloves) My family is accustomed to my garlic fascination

As the stomach bug still wrecks havoc in my house, my dd#2 and I will be eating lightly (she has the bug, I just can't eat when someone in the house is puking). I'm making American Chop Suey for the rest of them...which equals my dh because other dd and ds won't eat it. So I'll make them hamburgers. DH will have lunches for the week with the leftovers though. LOL

We're having funeral sandwiches, roasted red potatoes, roasted broccoli and carrots, pineapple and cantaloupe chunks, and brickle bundt cake for dessert. I didn't have a chance to post yesterday, but since peajays started it ....Last night was crazy and I had to go with the quickest and easiest thing I could find. We had chicken tacos (freezer) & mexican rice (package).

We spent the weekend removing wall paper from SO's Mom's house. I had some chicken thighs that I had to cook up, so I boiled them on Friday and she made us chicken chop suey for dinner on Saturday. We will have the leftovers tonight.

Half the time my dinner plans change, so I end up posting the following day about what I had the night before. I have bone-in chicken breasts sitting in the fridge, and I plan to throw them in the crock pot. I might just make my own recipe with garlic, onion and a bunch of herbs. That way, if there are leftovers, I can use the chicken for almost anything I want. I will likely fix baked potato and mixed veggies with it. Lisa

I'm coming here for inspiration. I also need to check in with DH when I get to off work. He wasn't feeling too well when I left for work. As per the norm, I'll be making a last minute decision and probably pulling something out of the freezer.

I'm going out with the girls for Chinese tonight. DH and the kids decided they'd have sandwich night. They went shopping and came home with a few different kinds of deli meat, several cheeses, a couple of variations of bread (pumpernickel, sourdough) and lots of condiments. From the looks of it, they plan to host the entire neighborhood.

Tonight is pesto salmon with asparagus and tomatoes. It is a foil pack recipe that I would like to grill but it is supposed to start thunder storming at 5 so they may be oven baked.

Ours now only accepts teeth in Ziploc bags and taped to the bedroom door.
The going rate in our house is $5 for the first tooth and $2 thereafter
