I'm still a bit bleary eyed from last week. So, dinner will be tacos or fend. DH has been a wonderful caretaker, but it's time to give him a break and make a nice dinner, soon.
What's on our menu?
Have a glorious week everyone.

Leftover beef stew from last night is dinner here. Pretty sad it is cold enough to have stew when we should be grilling.

Nothing! There's a market in town this week, so I had some German sausages (oh.my.goodness! I'm drooling just thinking about them), and DH and DD had paella. DS is visiting friends, and I heard him mumble something about barbecue.

Last night I prepped the meat and beans, etc. to make a jumbo batch of beef enchiladas. I think maybe that will be dinner tonight, still not sure on the veggies, maybe sautéed zucchini and salad.
Oh, and last night's dinner was a huge fail. We are clearly rib- challenged. I swear over the years we've tried every recipe and it never works out how it should. We followed the beef short rib recipe word for word, and still ended up with tough meat. All I want is falling off the bone ribs, why is that so hard?

We are having leftovers of the Chicken and Biscuit Casserole from a couple of nights ago, along with a green salad. Boring, but I need to get stuff out of the fridge!

Dh has to take MIL to an appointment later this afternoon so he's bringing her over for dinner ... We'll be grilling burgers and hot dogs with buns from an excellent local bakery I'll make some baked home fries as well ... Nana is on some kind of medication that has seriously increased her appetite so I think she'll like that

DH got a much-deserved bonus so we're celebrating with our best friends at a Japanese hibachi grill. I'm so looking forward to it!

My dh got Swedish meatballs on his mind so I made them yesterday for tonight (and he froze enough for two more meals). We'll have mashed potatoes, broccoli, cauliflower and corn with them! I hadn't made them before and used a recipe from Damn Delicious.

I guess leftovers, unless I get a better offer. There's still ribs and mashed potatoes in the fridge, plus what's left of a Costco chicken, and spaghetti and meatballs from last night.

I agree with Lucy - cook those bad boys in the crock pot. Another option: If I want to grill ribs instead, I boil them first for an hour. Then grill them. I am having spaghetti for dinner. I am not really in the mood for it, but the kidlets will be happy. Lisa

All I have to do is put them in a pan and bake them ... they fall off the bone Do you have anything like that where you live?

I will be trying out hamburgers on my George Foreman grill. I miss having a regular propane outdoor grill so much.

They are 100% Canadian. I know of some people who go to Ontario to Sauble Beach & they stock up on the M&M's food before going back to the USA. They love the Naninimo bars butter tart bars & the wonderful cabbage rolls. Great value & taste great. As a single person, their individual portions are just what 1 person needs. Their ribs & the roast beef are cut properly with 0 waste.

Well, we ran errands - we both got haircuts this a.m. then to Home Depot and finally a 'quick' trip to Walmart (we all know it is never a quick trip to Walmart). After getting home and putting all the stuff away, we were both too tired to think about preparing anything for lunch/dinner so DH finished up the French Dip Roast Beef Sandwiches and I had a BLT with a tomato from our garden - it was the best BLT I've had in ages. Everyone, have a wonderful week !!!!!

Dh out of town so I might make myself an individual veggie pizza. Or have leftover rotisserie chicken. Or both. And a mango. I still have one left. I really want those chocolate oatmeal cookies Trixie Bender has in her menu. Thanks for the thread.
