I have cauliflower that needs to be used. Looks like I'll make cauliflower pasta. That also means that I make homemade mac and cheese for the kid who hates cauliflower pasta. Ya. I'm a nice mommy today. As long as I don't find wire hangers in their closets it's all good. What's on your menu? Have a wonderful day everyone.

I have been in court all day, so today is "fend for yourself" night. DS found a pizza for himself and his little sister and I will eat something....probably....does chocolate count as dinner?

I'm totally not in the cooking mode today so no complicated recipe and I definitely need to make something that everyone will eat ... that narrows my choices down I think I'll get dh to grill some steaks and salmon and I'll make some baked homefries ... I could say that other veggies would be involved but I would be lying

Crispy Goat Cheese and Arugula Salad with candied pecans and honey vinaigrette. DH is gone tonight, so I'm making dinner for my neighbor friend and she's bringing the wine!

We're having an Asian chicken salad served on lettuce, a new recipe- Sesame Green Bean Salad, quick breads (banana & cranberry-orange), pineapple and cantaloupe chunks, and an oatmeal-butterscotch cookie/cake for dessert. Dinner salads are a tough sell at my house. Wish me luck!

Spaghetti and Meatballs with a salad. I have been attempting to serve this for 2 nights, but we got home too late both nights. I cooked my meatballs last night so just warming sauce and cooking pasta (it would have been homemade pasta Sunday).

It was just too warm yesterday (Even in the house) and it didn't feel like pot pie weather. Today is grey and windy. Chicken pot pie weather! Also making a dump cake since my sweetie asked. He rarely ask for special requests so I'm happy to do it

Spaghetti and meat sauce for us. Saturday morning I 'doctored' some jar sauce with pork, ground beef, peppers, onions and fresh basil. Dh took some out of the freezer this morning.

I have a pork roast in the crock pot that will be turned into Pulled Pork BBQ. I made slaw Sunday, so we will have that with it and some baked potato skins.

Absolutely no clue. I need to take the 7yo to tae kwon do myself tonight (unexpectedly) and it's hard to work cooking dinner around that without advance notice so I can use the crockpot or plan something really quick to cook. BUT I'm headed to the supermarket today anyway, to pick up a Lunchable for him to take on his field trip tomorrow so I'll find something easy for dinner or we'll pick up dinner on the way home from TKD. He's really not a fast-food fan (whaaaa??) so I need to think of something. My niece is home and asked for chicken noodle soup, but it's not going to happen tonight. P.S. Beans! He likes the BBQ beans from a can, so maybe that'll be dinner tonight plus an easy veggie.

Feeling much better and being able to chew better too, so we're having brown sugar/bourbon glazed salmon with steamed rice, and peas. Still softer stuff, but I'm not quite ready to take on steak or salad-quality chewing! lol

Playoffs are over for oldest ds, but, we're not off the hook that easily, tonight there's the last hooray of the year at his middle school, and he's playing in the band. I'm boycotting paying $10 per person for a slice of crappy pizza and a drink, so, instead, after the performance we're heading home for a late dinner of meatballs and pasta for the kids and meatballs and broccoli for me. Dh is on a biz trip, so I'm sure he'll be eating at a nice restaurant tonight.

I came home from work with an actual dinner plan in my head (salmon and salad) but found that DH picked up a pizza on his way home from work. Ok, then. Fruit salad and cheese for me and pizza for him.

Cauliflower PASTA??? Do tell scrapmaven Potstickers!!! First of all, I'm a big fat liar, because dh wanted to clean out the fridge and do a leftover night. Fine by me, honey. I'm not sure if I'm supposed to post the recipe, because it's from a paid site, but I like to share good recipes w/my pea friends. Cauliflower Pasta with Panko. ingredients: 3 slices bacon, cut into ¼-inch pieces ½ cup panko bread crumbs Salt and pepper 2 tablespoons vegetable oil 1 large head cauliflower (3 pounds), cored and cut into 1-inch florets 1 onion, chopped fine ½ teaspoon minced fresh thyme 1 pound campanelle 5 ½cups chicken broth ½ cup dry white wine 3 tablespoons minced fresh parsley 1 teaspoon lemon juice, plus lemon wedges for serving Serves 4 to 6. (Farfalle, orecchiette, or gemelli can be substituted for the campanelle. If the pasta seems too dry, stir in up to 1/4 cup of hot water.) 1. Cook bacon in 12-inch skillet over medium-high heat until crispy, 5 to 7 minutes. Add panko and 1/4 teaspoon pepper and cook, stirring frequently, until panko is well browned, 2 to 4 minutes. Transfer panko mixture to bowl and wipe out skillet. 2. Heat 5 teaspoons oil in now-empty skillet over medium-high heat until shimmering. Add cauliflower and 1 teaspoon salt; cook, stirring occasionally, until cauliflower is crisp-tender and browned in spots, 10 to 12 minutes. Remove pan from heat and cover to keep warm. 3. Heat remaining 1 teaspoon oil in Dutch oven over medium heat until shimmering. Add onion, thyme, and 1/2 teaspoon salt; cook, stirring frequently, until onion has softened, 4 to 7 minutes. Increase heat to high, add pasta, broth, and wine, and bring to simmer. Cook pasta, stirring frequently, until most of liquid is absorbed and pasta is al dente, 8 to 10 minutes. 4. Remove pot from heat; stir in parsley, lemon juice, and cauliflower; and season with salt and pepper to taste. Serve, passing panko mixture and lemon wedges separately.

well.. had I posted to this this morning I would have said I was making breakfast for supper tonight including home made biscuits, eggs, bacon, sausage links..maybe some gravy with the bonus being having some extra biscuits so I could have one in the morning before work(I clock in at 545a tomorrow).. but now.. Ive had a bit of energy today and used it by -going to walmart -mowing the yard--which included running out of gas halfway through and having to go get more gas -some laundry -re-arranged the front porch with the focus being moving the doghouse,yes its on the porch -emptied/loaded dishwasher and straightened the kitchen and I think Im leaving stuff out.. either way with the Fibro I am pretty wiped out.. soo not sure if home cooked meal will happen, we'll see. its .50 corndog day at Sonic so theres always that for an option
