Tonight I'm finally going to make the cauliflower pasta that I've been trying to make for a few days. Last night was a fend night, because everyone was off in different directions, again. I'm still not used to that. Youngest ds has a new job and works p/t in the evenings.

I bought a big package of ground beef at Costco yesterday so I'm thinking horseradish meat loaf and I'll be making a big batch of spaghetti sauce to freeze for future meals. • Horseradish Meatloaf• 2 pounds ground beef (I use 85% lean) • 2 eggs, lightly beaten • 1/2 C. dry bread crumbs • 1/2 C. ketchup • 1 T. horseradish • 2 t. Worcestershire sauce • 2 t. salt • 1 t. onion powder • 1/2 t. black pepper • 1/2 t. mustard powder • 1 clove garlic, minced • 1-2 T. chopped fresh parsley • Sauce: • 1/2 C. ketchup • 3 T. brown sugar • 1 T. horseradish • 2 t. spicy brown mustard • 1/2 t. mustard powder • 1. Preheat oven to 375 degrees. • 2. In a large bowl, mix all meatloaf ingredients together well (Although messy, it’s easiest to do this with your hands). Press meat mixture into a 9 x 5 inch loaf pan or form into a freestanding loaf in the center of a baking sheet. • 3. In a separate bowl, whisk together the sauce ingredients. Spoon half of the sauce mixture on top of the meatloaf. Place meatloaf in a preheated 375 degree oven and bake for 50 minutes. • 4. After 50 minutes, remove meatloaf from oven, spoon remaining sauce over the top and return to the oven for 10 minutes. Remove from oven and let cool for an additional 10 minutes before slicing.

A win all around! Tonight, a local outdoor concert series begins. If my mom is up to going, we'll have burgers, likely, at the concert.

Well, yesterday I was going to make fried rice with the leftover chicken breast, but we didn't want that after all so I defrosted some thighs in the microwave and made chicken adobo in the Instant Pot instead. We had that with steamed rice and some broccoli. So now that we had an Asian-y meal last night, we for sure aren't going to want fried rice tonight with that chicken breast. So today's plan is to make soft tacos with it instead.

Last night we were supposed to go to a buffalo wings place on our way home from taking the beloved corgi to her semi-annual vet visit, so I spent the day calling wings restaurants to see if they allowed beloved corgis on their patios. Darling Husband and Dear Son wanted to try a restaurant with a party atmosphere and a pond outside (yay, mosquito breeding ground), but they -- interestingly -- didn't allow dogs on their patio. Once a month they have a big party/event and invite people with water-loving dogs to come and let the dogs swim in the pond, and it's very popular. But that's the only time they allow dogs at their restaurant. Hmph. Finally, my favorite wings restaurant said yes, they would welcome our beloved corgi with open arms, so we all memorized the menu online and headed out to see Beloved Corgi's super-cute vet. (Oh, my goodness, Dr. Box is the cutest thing ever -- she wears her super-blonde hair up in a really high bun, and her nails are always painted some crazy color, and she *clearly* chips her nail polish off like a professional paint remover, and she squeals all the time that Beloved Corgi is totally perfect, perfect, perfect, and just the best dog ever, and.... Yes, we love our veterinarian.)
So we're in the little exam room and Dr. Box was poking and prodding Beloved Corgi and cooing at her the whole time, and WOOSH. The rain swept over the building. Thunder boomed and the lights flickered, I swear. It's a Banfield clinic inside a Petsmart, so it has a big, industrial-feeling roof. The rain just *rolled* over it in waves of fierceness. And then it died out. And then it came back. Annnnnnnd it died away. Then it came back. My cell phone rang, and Dear Son says, "Hey. Did you know it's raining?"
Uh, yeah, we got that.
So we cancelled our plans to dine al fresco at the non-party wings place with the seriously great food, and we stopped at Newk's, and I finally got a damn ham sandwich, dammit. I've only been craving that thing for a week, right?! Maybe longer. I can't remember.
And that means tonight, Darling Husband will be cooking, and I saw pork chops were set out to thaw. No idea what his plans are, but I'm pretty sure pork chops will be part of them!

Well tonight we're supposed to be going to the local fair, so fair food for dinner.... IF the damned weather holds out. It's forecast to be storming from the start time of the fair until Sunday. LOL So we'll decide at 5:30 if we're having fair food or not. If not, then it's YOYO.

Tofu smothered in a Trader Joes jarred sauce, rice, zucchini and kale. Chances are my plate will be completely overflowing with veggies and not much else. Still trying to eat up all the green stuff before we leave town. I can't bring myself to throw away perfectly good produce, so instead, I eat it until I'm stuffed to the gills.

We decided to do something fun today,and went to Oslo for a bit of shopping and a trip to a museum (my youngest loves museums). Sooo, dinner was chicken something at our favourite Indian restaurant. No she and her BF is watching Zootropolis and eating candy, while I'm Peaing and drinking tea.

It's cleaning lady Thursday and that means take out day. No mess in the kitchen allowed! Don't know what we'll have... maybe something from our local pub/tavern place. And fresh fruit for dessert. Our Safeway has had the best cantaloupe this season; I usually try to buy it from a fruit stand/farmer's market because it's never ripe or sweet enough from the grocery... this year they've been great!

We were planning to go out but so much life has happened that the day has been upside down. Dh just went out to get me a sandwich and pizza for himself. It's 2:00 so I'm guessing this might be the only meal... I will see about getting him to take me for an ice cream tonight. That would be a great dinner!

Well, if you have meatloaf on Wednesday then the next day you have meatloaf sandwich and fried potatoes DH style (chunks of potatoes). It was delicious and we used the last of our garden tomatoes.

This week has been all screwed up.....best intentions and all that...... We have yet to have what we thought we were going to each night. and tonight's no exception....we were going to have tacos, but DH just called and said "Don't worry about dinner, I had a large lunch with clients" so YOYO.... We need milk, so I have to go out to get that later and I may swing by our local sushi place for take-out. DH hates sushi.

Dh is with clients and not sure what time he'll be home ... Whenever he gets here I'll get him to grill burgers (because I don't grill, ever!) and I'll whip up some baked fries and some sort of salad Burgers are dd#2's fav so she'll be happy Dd#1 is out tonight with her boyfriend so I don't have to worry about her but my mum is coming for dinner ... I guess I had better clean up a bit

Stove top pasta. I made it up-bow tie pasta, a bit of chicken stock, a bit sour cream, a bit of chicken, throw in some spices and peas and...well, it isn't the best, but it is kind of like a chicken pasta soup that isn't soupy. Except-I think I salted the water twice. I don't think I have ever had such salty pasta. Like almost too salty to eat.
