The great thing about the Instant Pot is that it is a stainless interior - no need to worry about scratching anything. My first pressure cooker had non-stick and it was a pain. link to the Springform Pan I have that was recommended on a pressure cooker blog. It works really well!

After talking it over we DH, we decided to jump on it. With our two boys busy with sports, one of our issues is getting good meals on the table quickly. Can't wait to try it out this summer and see what it can do.

I bought mine at 3am! I got up to pee, and I remembers it was APD and got my phone and was thrilled to see the pot. I didnt realize I would have gotten a bigger discount ordering with Alexa though.

I think too many peas are trying to buy it- I'm trying to add it to my cart, and it keeps failing! :sob: Keep trying! Mine did that when I put my first request in, and it was only 3:30 am here. I figured I could beat at least the west coast shoppers, but it had issues and issues and issues. It finally went through and will be here in 2 days! SaveSave

Okay, you gals have convinced me to come out of lurkdom... Is the Instant Pot ideal (and justifiable, expense-wise) for someone who doesn't care for cooking (quick and simple is my game), is following a lower carb lifestyle, and only needs to cook for one person most of the time? My mother-in-law may, on occasion, want to give it a whirl for rice and beans.
Here's my situation: MIL cooks one big meal for our family each day -- it serves as lunch and dinner. I have some weight to lose so I prefer to be on my own for most meals, it's much easier this way. I've been eyeing the Instant Pot posts lately and I've watched several YouTube videos. Quite frankly, this thing looks fantastic. But for someone with very basic needs and limited cooking skills, is it worth it? Thank you for any and all input. I'm ready to buy, just need a little push.

Actually, I'm just happy that the Instant Pot is such an awesome Prime Day Deal - makes me feel less guilty for enabling. I have a big pot of Boston Baked Beans cooking in mine right now. An hour from start to finish using dried beans. I don't worry about soaking. I also have replaced half the cooking water with whey I saved from the yogurt I made in my IP earlier this week. It adds a huge load of protein.

Does the Instant Pot produce the end results for dishes that you normally would simmer down for a more concentrated flavor? Yes. The meat and broth will be intensely flavored. However, since you don't lose any liquid while cooking, you sometimes have to sauté the sauce/gravy after you remove the cooked meat in order to thicken it. If you don't mind thin gravy then you can skip that. You our can make the most intense stock from a chicken carcass, a couple of carrots, couple of sticks of celery, quartered onion, garlic, salt and pepper and 4 quarts of water. Set on high pressure for 45 minutes and then strain when it is done. No simmering on the stove for hours and hours.
