My daughter just made cookies with a boxed cake mix. It took her literally 5 minutes with a recipe she found online. Do you use boxed cake mixes for anything other than it's intended use? I'm sure there are some of you who would never use a boxed cake mix for even a cake, but those who do...do you venture out into anything else??

I've made cookies with cake mix, also dump cakes where you just sprinkle the mix on fruit, add melted butter, nuts if desired, and bake. Also the gooey cakes, especially the pumpkin one - delicious!

Gooey cakes are my favorite - I am partial to the butter one.
Cake balls, of course. My favorite are red devil with mixed with cream cheese icing dipped in white chocolate. Amazing!
Sock-it-to-me cake is delicious with a brown sugar glaze. I haven't had one in years.
And poppyseed cake - not almond or lemon, but plain - in a bundt pan is also scrumptious.
Dump cakes are really good, too.

I use cake mix for its intended purpose, but I always modify the mix for cakes and cupcakes, I never use the ingredients list on the back. This is one of may favorite recipes. Two ingredients.
Ingredients:
18 ounces spice cake mix 15 ounces pumpkin (not pumpkin pie mix)
Directions:
1 Simply mix the pumpkin and the spice cake mix together with electric mixer until well combined. (At this point you may also want to throw in some nuts or raisins, if you like.). 2 Spoon into paper lined small muffin/cupcake tins, 2/3 full. (The batter is very thick and doesn't "settle", so you may wish to smooth the tops if you care what the finished product looks like!). 3 Bake at 350* 18-22 minutes or until a knife comes out clean.

I bought a great cookbook years ago called "The Cake Mix Doctor" that has a lot of recipes in it that start with a cake mix. One of my children's favorites was for a chocolate covered cherry cake. It had maybe 5 ingredients total in it. One was the cake mix, another was a can of pie filling, sweetened condensed milk, chocolate chips and eggs. I think that was all that was in it. It was really good.
The cookbook had cakes, bars, cookies and maybe even a pie or two.

I've made the cookies, but I don't love them. I'm very particular about my cookies. And I've made the dump cake. I actually made one last week, but it didn't turn out well. Not enough butter I think.
Mostly I just stick to cake. And it has to be Duncan Hines. The other brands are too dry.

Here is my tried and true recipe for modified cupcakes. I know it sounds crazy, but I bake cupcakes at least a couple of times a week and these are as light and fluffy as clouds. I get tons of compliments on them.
1 box cake mix 3 egg whites or 1/2 c. liquid egg whites (I use the liquid) 1 1/3 c. water 2 Tblsp. vegetable or canola oil
In a large mixing bowl mix all ingredients (I sift the cake mix) until moist. Turn mixer up to med hi and mix for 2 minutes (i set the timer, 2 min is longer than you think). Scoop into muffin tins lined with paper liners. I use an ice cream scoop to scoop batter into liners. Bake at 350* for 15-17 min or until a knife inserted in center comes out clean. Transfer onto wire rack to cool. I do this immediately upon taking them out of the oven. Let cool completely and then frost.

I use Devil's Food Cake mix to make Andes mint cookies from Six Sisters' Stuff blog.
Mix cake mix, 1/2 cup oil and 2 eggs. Bake spoonfulls of dough at 350 for 6-9 minutes. (That is what the recipe calls for, but I usually bake a bit longer.) When they come out of the oven, place an andes mint on top of each one and after they melt, use a knife or spoon to spread the melted mint over the entire cookie. YUMMY!!!

I made KevinandAmanda's blueberry cobbler/crumble with a Duncan Hines Golden Butter cake mix this week. It was BY FAR the best cobbler any of us had ever eaten. Even the pickiest eaters gobbled it up. She's right though, it's hard not eat it all up in one sitting.

Lemon Whippersnappers
1 egg 2 cups frozen whipped topping, thawed 1 (18.25 ounce) box lemon cake mix Powdered sugar
Combine egg, whipped topping and lemon cake mix. Pinch off approximately 1 tablespoon of dough and drop in bowl of powdered sugar to coat. You do not need to roll dough into balls. Drop onto a greased baking sheet. Bake at 350 degrees F for 10 minutes. Cookies may not look done, but they are. Let stand 1 minute before removing from baking sheet. Makes about 65 cookies.

Baked Ice Cream Cake! Super easy, versatile recipe that tastes delicious. I'll have to find the recipe. I know it's a boxed cake mix (any flavor), 2 cups ice cream (any flavor), 3 eggs & water (can't remember how much). Grease/flour or Grease/cocoa (depending on color of cake mix) bundt pan, bake at 350, (can't remember length of time). I've served warm, or cooled with a powdered sugar or powdered sugar/cocoa glaze drizzled on top.
I'll edit with the information.
Found the recipe:
Baked Ice Cream Cake
1 box chocolate cake mix (or any other flavor) 1 pint chocolate ice cream, softened (again, any other flavor) 3 eggs 1 c water
Preheat oven to 350o. Grease a tube or bundt pan, then dust with cocoa powder.
Beat all ingredients together for 4 minutes, pour into pan and bake 45 minutes. Serve with a dusting of confectioner’s sugar, a thin icing, whipped cream or the frosting of your choice.

I make this same thing but with a dark chocolate or devil's food cake mix. Sometimes I add about a half a bag of chocolate chips. If the batter is too thick, adding 1/4 to 1/2 cup of water helps. Took my kids a long time to realize I was sneaking pumpkin into them!

Cake balls (My son calls cake balls crack balls, because, in his words, they are addictive and when they are gone you are all trying find someone to make you more.)
Cake batter pancakes
There are several candy recipes I have that use cake mix.
I can't find it at the moment, but there is a muddy buddies variant that uses cake mix to make it taste like birthday cake.

Ok. I was not hungry when I opened this thread. I was not remotely curious before. I rarely bake anything. I had no desire to shop.
