I make a Ricotta Cake which is delicious!
Ingredients
1 box yellow cake mix 2 lbs. Ricotta 4 eggs 3/4 cup sugar 1 tsp. vanilla
Baking Instructions Prepare yellow cake mix as directed on the box.
Spray 9 x 13 x 2 pan with Pam or I just use butter.
Pour cake batter into a 9 x 13 x 2 pan. Glass pan works best for this. Don't use the throw away alum pan with higher sides.
Put aside.
Mix ricotta, eggs, sugar & vanilla with wire whip.
pour on top of cake mix 1/2 inch from sides
Bake 350 for 45-55 min., depending on your oven.

I make chocolate chip cookies, but my recipe is slightly different than most that are out there: 1 french vanilla cake mix 1 egg 1/2 cup sugar 1/2 cup oil 1/4 cup water 1 - 1/4 cup chocolate chips
They are my husband's favorite and I make them about once a week. I'm just glad they are so easy.

I also love the Cake Mix Doctor books. I never make a cake mix plain, I always do a "doctored " one. But I don't care for the cake mix cookies.

I haven't the faintest idea where you buy a can of pudding.

Here is my tried and true recipe for modified cupcakes. I know it sounds crazy, but I bake cupcakes at least a couple of times a week and these are as light and fluffy as clouds. I get tons of compliments on them. 1 box cake mix 3 egg whites or 1/2 c. liquid egg whites (I use the liquid) 1 1/3 c. water 2 Tblsp. vegetable or canola oil In a large mixing bowl mix all ingredients (I sift the cake mix) until moist. Turn mixer up to med hi and mix for 2 minutes (i set the timer, 2 min is longer than you think). Scoop into muffin tins lined with paper liners. I use an ice cream scoop to scoop batter into liners. Bake at 350* for 15-17 min or until a knife inserted in center comes out clean. Transfer onto wire rack to cool. I do this immediately upon taking them out of the oven. Let cool completely and then frost. This is the recipe I use that is on the cake mix box lol

Who knew.

I haven't the faintest idea where you buy a can of pudding. In the grocery store by the boxed pudding mix. I don't use it for anything but this cake. I used to get it at Meijer, but they don't carry it anymore in my store. Now I get it at Kroger.

I've made dump cake and cookies before but it's been ages.
Tonight I made funfetti cupcakes for my class tomorrow. They have new frosting that is bright blue and I got that too. OK, I wasn't feeling very creative and just the box for its regular purpose. The kids will like 'em though!

I have done a few different frostings. Cake's so good you don't need it though.
