I need a main dish recipe and I'm stuck. I generally bring chili, soup or a pasta casserole to our winter get togethers but summer is not casserole, chili or soup weather. I could really use some ideas. TIA

I like to bring mini sandwiches. I usually do turkey, ham and roast beef. Or do wraps with with the same meat. Joseph's makes a really good honey wheat wrap that is perfectly made for ham & cheese.

What about a cold pasta salad with chicken? Mini subs are popular, as are meatballs. The Pioneer Woman has a meatball recipe that has a thin gravy-like sauce to keep them moist. Pulled pork would be good, too. Or you can make hot dogs n the crockpot. Super easy. Crockpot Meatballs

pasta casseroles will still work what about shredded BBQ pork or beef sandwich with hamburger buns?

Taco pasta salad.
1 pound ground beef taco seasoning 1 green pepper, diced cherry tomatoes, halved black olives, sliced 1 bag shredded cheddar cheese (not finely shredded) 1 16-oz bottle Western dressing. (Western is the brand name but if you can't find it, get a french or russian.) 1 pound of rotini pasta
Brown the ground beef. Drain. Add taco seasoning (and water) to taste. Set aside to cool. Prepare pasta. Rinse in cold water. Drain well and cool.
Combine beef, peppers, olives, and cheese (this is why the beef and pasta need to be cooled-- if you add the cheese while either is hot, it will melt).
Add in pasta.
Pour in dressing and toss to coat (you may not want the whole bottle, so start with half and add to your liking). "Toss to coat" works really well if you have a bowl with a lid to mix this all in-- put the lid on and shake. Refrigerate overnight (flavors will blend). Garnish with tomato halves just before serving. Or leave them out if you want.

Thank you ladies for the ideas. I'm torn between the taco pasts salad and the meatballs. Maybe ill make both!

I just made a pasta salad as well as a fruit tray with dip for an event this past weekend and both were hits, especially the fruit tray which pretty much disappeared. For the pasta salad, all I do is cook a package of tri-color pasta according to directions, drain, and run cold water over it until it's cool. Then, in a bowl, I stir in italian salad dressing (sorry I don't have any measurements; I just do this to whatever looks "normal" to me), a little balsamic vinegar, some garlic salt, and a bunch of shredded cheddar cheese. For the fruit dip, it's just 8oz of softened strawberry cream cheese mixed with a jar of marshmallow fluff and a splash of orange juice. I always make sweet and sour meatballs. Quick, easy and the crock is always fully emptied.

I make loaded baked potato salad. I found a few recipes on allrecipes and came up with my own. They are super easy!!

I think chili is good for any time of year, but the other suggestions look good too.
