Dh is going to make Carnitas in the slow cooker. Then everyone can make tacos or a bowl. He's off today and that means that I am off, too. I like that a lot. Soon, I'll be going to my weekly acupuncture appointment and then I'll figure out the day from there. I'm making big headway on a jigsaw puzzle, so I'm sure I'll be focused on that for part of my day.
What's on your menu?
Have a happy Monday and a wonderful week.

Surprise! I have to go to the store after work. I am thinking mini chicken pot pies. Easy and filling and everyone like them. All the food needed in those little things, meat, veggies and bread.

I like what Trixie Bender said. No clue. Not chicken soup because I'm saving that for tomorrow when I have the 7yo. Probably grilled cheese or something.

I'm thinking shrimp soft tacos with chipotle sour cream and maybe a kale salad(comes in a bag, not from scratch!)

Roasted pork, green beans with garlic and bacon, garlic rosemary potatoes, and cheesy biscuits, and mud pie for Dessert. It's my day off and I feel like cooking.

A friend gave us some venison over the weekend, so I'm making stew. Same recipe as my beef stew but with venison.

Meatloaf
Not that we had our whew moment yesterday still working on that last app but I didn't end up cooking.
Anyone know can meatloaf go right in the instant pot pot or should it be in an inner pot up out of the liquid?

Fiskegrateng (yuck!), which made DD over the moon happy (weird, weird kid). DS had leftover turkey, since he hates it even more than I do. My mom likes fiskegrateng, too, so we invited her over for dinner, and she came bearing gifts.........cinnamon rolls!

DH and I are just back from lunch. I realize most normal people get to have lunch out with their partner often, but with his odd work schedule, it's a treat for us. I had a wonderful falafel salad. I don't need a heavy dinner. I think we'll have a fruit plate tonight. If DH needs more, he's good about fending for himself.
I'm having a lovely Monday and hope you all are too.

Anyone know can meatloaf go right in the instant pot pot or should it be in an inner pot up out of the liquid? I haven't made it but I'm pretty sure it has to go on the trivet wrapped or in a pan of some sort.

Yes. No motivation here, either. We have 4 hefty spareribs left over. I'll make some braised cabbage with bacon. Pork upon pork. Sounds good to me.
Thanks for the thread. It's so dreary here that I am reading threads that I truly know nothing about - hoping to find something cheery.

I still haven't been able to muster any motivation to cook, so I narrowed the options to frozen pizza or the Minestrone I made the other day. I presented those options to dh and he just gave me a blank look. I then mentioned his third option..... absolutely nothing. He correctly interpreted my tone of voice and quickly chose the Minestrone. Who said men are clueless?

Meatloaf Not that we had our whew moment yesterday still working on that last app but I didn't end up cooking. Anyone know can meatloaf go right in the instant pot pot or should it be in an inner pot up out of the liquid? Put your trivet in and your water. Make the meatloaf the way you like it then make a sling out of tin foil and place your meatloaf on the sling, make sure it has room around the edges, I mean don't fill the entire width of the pressure cooker. Put into pressure cooker, fold over edges so they don't interfere with the pressure gauge. Cook at high pressure 30 minutes for 4-5 inch thick meatloaf. If your meatloaf is thicker, I mean heights wise cook for more minutes. I forgot to mention let it naturally release for 10 minutes before opening pressure valve. We are having the ham loaf for supper tonight since we didn't have it last night. It will be served with vegetables of some sort pulled out of the freezer.

I've been doing some fascinating reading today about the original owners of 2Peas. Dinner is going to be steaks and salad (maybe a baked potato for the non-dieters) I also have a Costco Chicken that I need to shred and make something out of. I made a quick trip to Costco yesterday and spent about 200 bucks in about 10-15 minutes. I didn't even get to look at any of the fun stuff.

Hi all, I have returned from the land that wifi forgot, AKA my dad's beach house. I have had a lovely few days catching up with family and old friends, though it wasn't really beach weather. Lots of delicious, simple food; a BBQ for all dad's old teacher friends on Friday (I caught up with 2 of my 12th grade teachers!), roast lamb with everything on Saturday for his actual birthday, then loads of left overs on Sunday!
Last night we went out for dinner, as my sister and I arrived back at her place just before 7pm, and my son came to collect me and take me to his house. We went to a local Steakhouse, but all decided on burgers, as they looked so good. They lived up to expectation - good meat patties, dripping melted cheese, loads of 'extras'.
When we got back to my son's house, I was greeted very enthusiastically by his 2 dogs. Littlest dog has obviously missed me, as I woke up this morning to find him snuggled in next to me on the sofa.

The only time I ever eat lunch with my husband is when we are on vacation. I don't think I know anyone who isn't retired that eats lunch out with their partner very often.

Protein Powder (for dh - I think it is gross), makeup wipes, shampoo and conditioner, spaghetti sauce, this awesome Asian soup, lemons, onions, peppers, Perrier (my new drink since I can no longer "drink" ), tea, Gain, TP and we are out of there unless dh wants to shop for clothes We find the meat up here in Canada to be quite expensive at Costco so we don't always buy it ... chicken breasts sometimes ...

It's a gorgeous day in my neck of the woods!! We have rain storms coming all this week so we had to take advantage of the sunshine.
We went on a 4 mile hike this morning and then ate lunch at the beach! It was so nice!!
Today is our big family dinner - Tacos, rice and beans! Probably chips and dessert too.

I'm going to the cricket tonight straight from work so I will be eating whatever I can get at the ground. It depends on whether we sit in the "outer" with the plebs (in which case it will probably be a meat pie or bucket of chips), or whether DSO gets us into the MCC Members Pavillion (in which case the food will be a bit fancier).
Hopefully it has cooled down by the time the match starts, because it's going to get to 38ºC today (100ºF).

(I'm avoiding google just in case I don't want to see pictures of it. ) I'm making cheeseburger soup and dinner rolls. Because after ice skating through parking lots and sidewalks in the cold, cold rain, that will be warm and yummy.
