I was off helping a friend sort through her crafty stuff to get ready for a consignment sale. We got through all the boxes she brought out-- sorted and bagged. She'll still have to label it all but it's in so much more manageable condition now. Tonight for dinner is this Parmesan Chicken Bake that I first tried a week or two ago. It turned out really delicious-- I've tried lots of variations of chicken parm and we haven't liked any of my attempts except this one (because, as SO says, "you can actually taste the chicken"). Bonus: no breading OR frying to be done.

scrapmaven, I hope you enjoyed your soup. Your post really made me think about slowing down, tasting appreciating the food we eat. I was making things up tonight. I cooked ground turkey with coconut oil, onions, celery and sweet potato, adding riced cauliflower just before serving (to heat it up, but keep it crunchie). The meat was seasoned with a nut & spice blend from Trader Joe's, called Dukkah, which is my new favorite blend. We also had mashed regular & sweet potatoes.

We had lasagne that has only been in the freezer 2 weeks.....I've realized lately that I do NOT like some things when they've been frozen.....Lasagne and spaghetti sauce not only gets WATERY  but they also seem to lose some of their flavor. Dear unpicky hubby does NOT notice, and still enjoys it, so that's nice!  It bugs me that they don't taste as good after freezing, because----as many of you would agree--- making large quantities of things and freezing the remainder is such a GREAT timesaver! scrapmaven ......How awesome that you got to try some soup!!! Gammon is the hind leg of pork after it has been cured[1] by dry-salting or brining. It may or may not be smoked. Like bacon, it needs to be cooked before it can be eaten.[2] It may be sold on-the-bone or without bone, or as steaks or rashers. It differs from ham in that ham is cured after being cut from the carcass but not cooked, and the curing process for ham may be different.[3] ----------------------------------------------------------------- Also, may I add---I'd appreciate any good thoughts/ prayers from my wonderful dinner tribe! I have GOT to get my hip replaced, and I am skeeeered!!! I was supposed to have it done back in December, but I was SO afraid, and cancelled. I DO have several other VALID *medical* reasons why I cancelled, but I won't go into all of those details now....But even though I have other things going on that will make recovery from hip surgery VERY difficult, I just can NOT live this way anymore....my poor hip feels like it is BROKEN most of the time!

Wow, everyone with health issues or sick kids ... I hope you all feel better soon. scrappintoee, get that hip done. You'll feel so much better. I ate Tagalongs (Girl Scout peanut butter & chocolate cookies ... taste like a peanut butter cup ... mmm) for dinner.  Plus leftover pasta from last night. I tried to pin Eddie-n-Harley's chicken Parmesan recipe, but it turned out I already had it pinned.  And a special message to leannec: WTF?! Please re-train them to wait until you are seated and ready to eat before they touch their food. This is basic good manners and you'll be doing your girls a favor.

Tonight we took ds and his family put to dinner for his birthday. I had a carne asada torta and dh had a chirizo and egg torta. And then we had massive banana splits for dessert!

lucyg....ooooh, Girl Scout cookies and pasta ----great combo !!!  (oh, and P.S...thanks for the encouragment.....I HAVE to do it and stop worrying sooo much!!!) P.S.....I was a girl scout forever, and have fun memories of selling them, and EATING sooo many of them!  I crack UP over some of the memes I see on Facebook about Girl Scout cookies---most of them saying those cookies are like DRUGS and the scouts are "dealers"  A friend posted a pik of them selling outside of Walmart, and she called them "little crack dealers" ....LOL! I have GOT to resist....I LOVE the thin mints and the samoas !!  I've been craving them for a few days, and I know if I buy any, I'll eat wayyyy too many!

scrappintoee,everyone I know who's had a hip replacement has felt so much better afterwards. A hot therapy pool does wonders for healing from the surgery. Fear is normal, but don't let it stop you. In the long run you'll be very glad that you did it. Thank you for the encouragement. Trixie Bender, it was potato soup, the only choice they had downstairs. I think it might have been too much, but last night it was fine. bc2ca, Savoring food makes each meal a treat. It also makes good food last longer. cadoodlebug, Whew! You have my permission to play couch potato or even eat a couch potato after 2 moves within a month of eachother.

It may still be too watery for you, but I found it less so that not baking before hand. Any surgery is scary, but you'll feel so much better with it done. I'll be praying for you.

Yesterday, I made a roast chicken that I pre-brined, stuffing for DH & I, baked potatoes for the kids, and brussel sprouts. Canned cranberry sauce for the kids too.
