Hey everyone! I'm starting the thread today because scrapmaven has an appointment ... best of luck to her My plan of making Creamy Chicken Penne didn't work out last night so I'm making it tonight ... I'll probably make it with linguini rather than penne though because I prefer it ... I'll also throw some sundried tomatoes on my serving What is on your menu tonight?

Leek and cheese stuffed baked potatoes with vegetable, ginger and chilli stir fry. I've spent too much time scrapbooking today to attempt anything complicated!

Pork steaks, done on the grill, with my home made satay sauce. Salad on the side. DH is currently in transit - he left Amsterdam 30 minutes ago and lands here in 45 - so I'll probably wait for him at this stage.
Today I tried something new. My boys bought me a cookbook for Mother's Day, called 'Levantine Kitchen' by Hummus Bros. I made their basic hummus recipe (halved it, thank goodness) and it turned out really well. It is on the fridge now, so the flavours can blend. It will be my lunch tomorrow with fresh veggie sticks. I am going to try some of the other ideas in the book with the rest of the batch.

I have some leftover cooked chicken breasts from the other day (real chicken that I actually cooked myself  ), so I'm doing something with those. Either soup, because I already made broth from the skin and bones, or else I'll just toss it into one of those rice mixes with some broccoli, too. leannec, thanks for posting the thread. Hope scrapmaven is well.

I'm having garden salad 🥗 with boiled egg. It's gone from rainy and 60 to sunny and 90 in the blink of an eye. Too hot to cook!

Needless to say, dinner is takeout Chinese, since I can't operate heavy machinery. Where are my drugs? I'm a nervous wreck and it's just small thing. Have a great Thursday.

Last night we stayed home from practice. 2 weeks ago there were 5 kids there, last week there were 4. We have a crazy busy day ahead of us and we just needed an evening at home. I ended up making a triple batch of hulk pancakes. The boys love them and they are good for them. Win/win!
ODS is on a day long field trip. Went to a tourist attraction nestled in the redwoods and then lunch/walk on the beach.
Both boys have games at 5! Dh is working, but G&G will be coming. I'll be the crazy lady running back and forth from the two fields. If only they were the ones right next to each other. Oh well lol.
I'm planning egg salad sandwiches, chips and fruit. We will just eat when we home, but will have a big snack this afternoon to help with the late dinner.

Pasta with a chicken sausage, tomato & spinach sauce is what's on the menu here. We signed a contract for our kitchen reno last night and I've started emptying out cupboards already. Can you tell I am excited. Sadly, my dream of a French door wall oven won't happen because of the limited and slightly awkward space we have to work with (if I could just push out the wall 2 feet everything would be perfect  ). I am in the market for a new gas range/stove if anyone has one they love and want to suggest. Hope your procedure goes well today, scrapmaven.

Tonight is seabass en papillote with lemon, fennel, white wine, shallots and whatever else the man of the house apartment's "perfect" recipe calls for. I've just finished preparing a bulgur wheat tabbouleh and Moroccan grated carrot salad to serve with it. sueg Levantine vibes over here too! Diluted with a bit of water, hummus becomes a protein-packed salad (GREEN! GARDEN! GREEK!  ) dressing of creamy goodness... Perfect for the spring and summer season.

We went out to eat at our neighborhood restaurant (Ground Pati) - I had a cheeseburger with fries (I've been starving for one) and DH had a Philly cheeseburger and fries. I brought some of mine home for DH to have as a snack later. It was enjoyed by all!!!!!

scrapmaven I am so glad everything went well and you DID get the good drugs.......LOL Food, well I haven't thought about the food problem for today yet.....but I guess now is as good a time as any to give it a good think....I am thinking chicken, a vegetable, and a fruit....there you go a boring Thursday supper all thought about and planned....LOL

Pizza tonight. When we were at MIL's house last Saturday for a birthday party (I could write a whole thread on the day), MIL decided it was funny to breathe right in my face knowing that she was sick and that my immune system is suppressed by medication I am on (Background, she was standing behind me as I sat on the loveseat. She was talking and I could feel her breath, so I said, Hey, could you not breathe your sick air right on me? She then proceeded to pant over top of my head hard enough that I could literally feel her breath right on my face). Since my infusion of the medication was on Sunday, of course, I ended up sick by Monday. While MIL always thinks that she is sicker than anyone else, I can guarantee you that I will be sicker with this than she ever was. I mean, who the hell DOES that?
