eh. I figure she know her family better than I do so if she is ok with it then who am I to argue? Would I do it? Probably not, but maybe there is an inside joke or something other than the obvious stab at his culture.
edited: so I just looked. Her daughter made the cake for her husband. I guess I don't see the big deal. Assuming they love each other, I doubt the daughter would make an offensive cake for her husband.

It's possible tacos are part of Mauro's heritage cuisine and he likes them (or makes them really well)? And it can sometimes be a little difficult to clearly draw the line where cultural appropriation is. I'm not sure a taco birthday cake destined for a member of one's family would fall under that, especially if you're in a pretty diverse community where you're exposed to certain elements such as food (and they may have become said family member's favourite).
I don't find it shocking but, then again, I'm also not Mexican so not in the best position to judge the matter.

I don't find it offensive, only because I would think it was done because he loves tacos, not because of his nationality. I would think he would be the one to deem it racist. I would have done it for someone if they liked tacos, regardless of their race.

It's pretty much like assuming you all Americans like McDonalds. My son does work at McDonalds and I got from Baskin Robbins a cake that looked like a hamburger and fries. It was so cute.

IF they had included the words 'we made this for him because he is Mexican' then yes, your observation could be seen as correct. But they didn't. He has a smile on his face in the photo, his wife who made the cake has a smile on her face. Nothing in the photo implies they were being hateful, rude or anything other than sweet by making him a cake. You don't know the back story and are making irrational judgements based on nothing.

I'm trying to see how it is offensive. It was made by his wife. There's obviously some kind of inside joke. If it was a new boyfriend or fiance to the family they had not met, yes it would be offensive because they know nothing about him.

The unpopular TC around here is definitely not Teresa though... We barely ever talk about her. Genuinely. Cross my heart. All I can say is that I hope this wasn't some silly stereotyped cliché-infused cake idea. But judging from the look on Mauro's face, it's far more likely it wasn't and is, instead, an inside reference we are not aware of.

It could actually very well be a race thing. But if the man's wife made it and not just because he loves tacos, you know what it probably is? A joke between them about their differences. People tend to have opinions about all sorts of things even if that opinion is irrelevant. My husband and I joke to each other when we're out and about and see interracial couples. One of us says to the other, 'I can't stand interracial couples' and we laugh at the irony of the statement...because WE are an interracial couple. With how crazy racial tensions are in the US right now, I'd rather find cause to be amused than to be offended.

I was not offended at all by the cake, but I did see it on Instagram and cringed a little. IMO it is tone deaf in today's racially sensitive environment. Not because I am the PC police, but I knew it would offend someone. I chuckled when I saw this thread because it was exactly the reaction I expected.
