After acupuncture I'll be in my happy place and will be ready for the day. DH is going to make chow mein tonight. Then I need to check my Halloween candy stock. I never know if we'll get too many or not enough trick-or-treaters.

Tonight the KC Chiefs are on Monday night football so I think I'll surprise DH with a oh, so nutritious dinner of Rotel cheese dip and chips. I'll add hamburger to the dip to make it more meal like. I'll probably have a salad with a small, small serving of dip/chips.

We planned leftovers. Our power went out at 11:00 last night and is still out. I use a cpap and struggle to get to sleep without it so I pray our power returns. Plus we have a large fully stocked freezer.

We're having what starts out as Italian chicken, green beans, and potatoes, but always turns into Italian chicken,tons of vegetables, and potatoes.

KelleeM, I hope you get your power back before you lose what's in the freezer. DH has a CPAP and I know what a huge difference it makes to him. Hope it is working for you tonight. After complaining about 100+ temps last week, it is delightfully cool today and in the low 60s. This means I'll use the oven and most likely make meatloaf, mashed potatoes and roast vegetables.

We ended up having yummy salmon last night then watched the World Series for 100 hours. Or it felt like that. Incredible game capped off by an RBI by none other than *my boy*, former LSU Tiger Alex Bregman. Need to go grocery shopping for tonight's meal. <sigh>

Happy birthday to the tribe family!! We will have meaty tacos and homemade guacamole. TOT was yesterday for us. We had a nice turn out, all candy was gone except a couple of Reese's that I kept for myself! 4 was the ending time, at 4:20 someone (meaning mom and kids) came to house asking for candy.

KelleeM , I hope your power is back soon! Happy birthday to your DS, jeremysgirl . Excersised two horses today, and I'm very Happy to say that Castellany behaved much better today. Even Figaro, who belongs to my niece, decided to be a good boy. He is a large warmblood, who has a habit of spooking at everything and nothing, and I don't much fancy being bucked off (I'm too old for that s**t), but he as on his best behaviour today. That probably won't continue, but he is so darn cute (just a big kitty, really), so it's difficult to be too mad at him. Dinner today? Sweet chili chicken, Wild rice, quinoa, lentils and vegetables.

I just put pork in the instant pot for some pork carnitas. Not sure what else will go with it, but I have a fridge full of veggies and all day to decide!

There is still paella so I might make that. I am kind of sick of it now. I will see how much is in the pan. Maybe it will be ok. It will depend how much meat is left in it. There will probably be clams left but I doubt any mussels or shrimp. I might get another bag of mussels.
Failing that I am not sure. My dad is going to Book Club (the wives get together and the men go out for dinner and have fun. It's also a widowers group as three men or so have lost their wives recently. It's a great support group for them).
Tonight I am back to making soup again. It's always the same. I think DS is sick of it, but he doesn't want to bother with eating anything else in the morning before work either. It's kind of a catch 22 situation. He doesn't like the salted salmon I can get, he won't eat shishamo or mezashi (which are two kind of nasty looking dried fish eaten for breakfast). He doesn't want cold tofu with ponzu, doesn't really eat eggs unless he has to and doesn't want bread. I think his only option really is soup.

Leftover beef stroganoff for the boy and me, plus egg noodles and zucchini. He claims he will eat the mushrooms. We shall see. Apparently he did eat mushrooms with his dad the other night. Happy birthday to the sons and husbands! KelleeM, I hope you get your power back fast. The freezer should be okay for days, though. Don't open the door.

Meatless Monday for us...We will be having scrambled eggs with lots of veges, roasted sweet potato, and an English muffin.
I've spent the last several days at the hospital with my son (the one that got married this summer) He has a liver disease with advanced cirrhosis and no spleen. About once a year he presents with a sudden high fever with no other symptoms. He texted me and I went to his house. His wife didn't quite know what to do and said, "Please help us!" I took his temp...it was 104 and gave him a dose of ibuprofen and an antibiotic that he has on hand for this exact reason. I then said "Get your shoes on, we are going to the ER". His wife said, "He wants to just ride this out". I tried to be as kind as possible and I told her that it wasn't an option and if she wanted to go along she needed to get her shoes on too because he was going to the ER.
Sheesh...long story short. They have to treat him like he is septic and started him on high does on antibiotics and lots of fluids. He was there for three nights. He is home now and almost back to normal. His blood cultures came back negative. This is the fourth time this has happened since he had his spleen removed, however his temp has never been this high.

I had thawed a lb of ground chuck yesterday with every intention of making stuffed peppers. That didn’t happen because I never got to the grocery store to get the green peppers because my Metformin is making me feel like cr!p. DH had leftover pepperoni bread for the 2nd night. I ended up making meatloaf and baked beans earlier today. DH is supposed to bring home the ingredients for the meatloaf glaze when he gets off work. If he forgets, I’ll just slap some ketchup on the meatloaf and call it done. Ha. Everything will go in the refrigerator until I get home later after picking up the grandkid from school and doing homework with him. Hopefully his mom won’t have to work too late tonight. I have no idea if my stomach will allow me to eat, but, DH loves meatloaf and will happily eat it as leftovers for days.

We have not come to a meeting of the minds on dinner tonight. I have to make chili for the crockpot tomorrow -- chili feed at work -- so maybe we'll just eat that. I'm making white chicken chili. Otherwise, we have leftover pot roast and veggies, and that will be a fine dinner, too.

The Birdhouse Lady, they may be married, but it sounds like they still need mom. I'm glad you were there to talk sense. I tutor tonight, so I'm grabbing a quick sandwich. DH can have leftover soup from the weekend. Of couse, I may get home in couple hours and find that he decided to fend a different meal.

I pulled leftover bean soup from the freezer from two weeks ago so we'll be having that since we got snow last night and it's freezing. So bean soup, Fried Ham (sandwiches), and corn bread.

We are having Roast Beef and Swiss paninis with Horseradish Cream. I don't actually love roast beef in a Panini, so I might check out DH's pastrami for the week and see if I can steal some of that for my Panini!

So apparently we’re having takeout when dh returns home from a wake. I tried lighting the grill to heat up some leftovers but couldn’t light it.
My daughter began her job today and is super stressed. She sleeps with a fan and won’t be able to sleep tonight. We’re not even on the schedule listed on the power company’s website. 😕 As aggravated as I am about this situation the potential sleep issues are the worst. Thanks for the good thoughts. We won’t be opening the big freezer at all.

For our dining pleasure this evening we will be enjoying food, again! We will probably enjoy chili tonight with peanut butter sandwiches. The chili will be made with no added salt tomato sauce and no added salt chili beans. The ground beef will be lean. Happy Birthday to the birthday people. The Birdhouse Lady I hope your son recovers quickly. KelleeM I hope your electricity comes back soon, it would be pretty darn cold here without heat. No water because the plumber isn’t coming til tomorrow. So Chipotle for dd & I. Contractor started today. Every surprise they find on hgtv shows they found in this 1 Wall. Gas line, heating duct and knob and tube electric. Just our luck. Although we were told the knob & tube was no longer being used. It clearly is in that room.

Thai Green Chicken Curry. I have 3 ways of making this dish: 1. Plenty of time, make the dish from scratch including the curry paste 2. Limited time, make it using a meal kit and just add chicken and vegies 3. Zero time, buy a microwave curry from the supermarket I chose option 2 this time (but only because they didn't have any of the microwave meals left when I went to the supermarket ).
