Oh my goodness, soooooo tempting. I have just gotten the recipe for the Starbucks egg bites, which are cooked sous vide, and I keep telling myself I would not use it enough to justify the purchase. Please tell me what else you use it for. Would a clean eater be able to adjust recipes for it?

I use Foodsaver bags for temps over 130*. I also cook in jars and other glass containers. Oh my goodness, soooooo tempting. Please tell me what else you use it for. Would a clean eater be able to adjust recipes for it? I think so. I do veggies a lot, and I find I can cook meats with a minimum of oil or butter. Honestly, if you never actually cooked anything in it, it's still worth having just for how fast it thaws and heats food, I am seriously considering getting rid of my microwave. I find my SV does such a great job of reheating food fast, with no dried out spots. I can thaw meat in less than 15 minutes, too. Just my opinion. Marcy

There is no need to add fats and oils unless you want the extra rich flavor. It is truly a set-it-and-forget-it appliance that makes even the toughest of meats so tender. I cleaned out my deep freezer - thread about it a week ago - and found a piece of brisket that was a year old. In the past I would have tossed it, but decided to try it using the Sous Vide. I told my husband that it was a 50/50 chance that we would have to order pizza. I cooked it using the Sous Vide for 36 hours, with only a dash of worcestershire sauce and some pepper, and it was the most amazingly tender, juicy, brisket ever. I, who have eaten brisket for all of my Jewish life, was stunned. It is very freeing and interesting to cook using an appliance where you can’t over-cook anything in the traditional sense. It may be that the texture becomes mushy if you leave something in for 12 hours beyond its cooked point, but it won’t ever be dried out.

We have this one and love it. We actually just ordered a second a couple of weeks ago and had it sent to my sil's where we are going for thanksgiving. Dh is planning on Sous viding the turkey and then flash frying it to finish.
I think I might order a couple as christmas presents!

I just happened to see a roast in the freezer last night and I might be able to save it by using this. So it had no freezer burn taste to it? I am just befuddled. Do you have a sous vide thread going now? I need to learn all the ins and outs.

I bought the Rubbermaid 12 quart square storage container and the hinged lid with the cut-out for the Anova. It is wonderful. No bothering with floating balls and other things to keep the water from evaporating. They were relatively inexpensive and have worked perfectly. If you need links, just let me know.

I think I saw that on Amazon while shopping around. Not sure I've sold DH on this idea but I really think he will like it and may even take it to the fire station to cook once he figures it out. I do like that it can be somewhat portable. We do have a car plug so he could theoretically start something the night before and take it in to work in the mornings. SaveSave

Links would be great! I'm excited to start using this. What's everyone's favorite meals with the sous vide? SaveSaveI just made $2 per pound on sale bottom beef roast in it. It was in my freezer. This morning, I got it out sprinkled it with Penzeys Chicago Steak Seasoning and put it in a foodsaver bag. I added a couple of dashes of Worcestershire sauce and then sealed the bag. I cooked it with the Sous vide on 133 degrees for 11 hours. Took it out, seared the outside in a cast iron pan - 1 minute per side - and then sliced it with my electric knife. It was as tender as prime rib. I buy cuts of beef that I never would have considered before - inexpensive- and they come out so tender. I also love cooking egg bites with it. Finally, it is also great for incubating/fermenting yogurt if you don’t have an IP. You can heat milk to 180 on your stovetop, cool it to 115, add your starter, and then pour it into mason jars. Put the lids on and put in your Sous Vide water container and cook at 115 for 8 hours and you have yogurt!
