I made a Paleo version of a wonderful artichoke dip for Sunday's Super Bowl game. It was so good but I sort of forgot about it. Well, I am day 5 of my Whole 30 and I really wanted to eat something that was sort of decadent tonight while watching the Olympics. So I ate it. Should I sleep near the bathroom tonight?
I didn't post a Would You Eat This, as it was such a last minute grab from the fridge. But now, after eating about half of what was left, I am wondering if I should have eaten it. I am thinking I should have just stuck with my fried plantains

It's been in the fridge since Sunday? I'm fairly confident you'll be fine, but if there's any left now, I'd probably toss it. One week/one reheat is the limit for leftovers in my universe.

Artichokes - known as fartichokes at my house. Hmmmmm, maybe that is why I did have some tummy rumblings. So other than that I guess I have a cast iron stomach. No issues whatsoever. Gosh it was so good! It will need to be made again and used as a side dish.
