Hey ladies! Book Club was a lot of fun last night ... we were a smaller group than usual but it was the first time ever that all of us had actually read the book  That meant that we spent more than three minutes talking about it Tonight I'm making roast beef, gravy, potatoes, some sort of veggie and dh will make his awesome Yorkshire Puddings ... yum! We've invited my mum and MIL for dinner ... at least the house is already clean (because of Book Club last night) so I can just relax today The meme for today relates to me missing my gel nails that I had for years and years ... I ended up with a nasty nail fungus a couple of years ago and had to have them removed ... now I just paint my own ... I definitely don't miss the cost of having those nails but they looked so pretty  What is on your menu tonight?

I am being very boring again and having pizza, cooked from frozen. No one else was available for SnB tonight - a sadly too common occurence lately - so I am home on my own. Even if I had been at SnB, I would be eating pizza, but it would have been a fresh baked one, dripping with cheese!

leannec, I'm glad you had a good time last night. You've more than earned some fun. Dh and ds will be having the pizza that we brought from our favorite pizza place yesterday. I haven't been cooking much the past several days. I'm getting spoiled. Have a fun day everyone.

I usually go with quick and easy dinners on Sundays, but tonight it will be easy, but not quick.
We're having roasted turkey tenderloins with carrots and potatoes, roasted broccoli, white and orange cauliflower, green beans, and a few other vegetables thrown in just for fun, rolls and the required cranberry sauce that looks like the can.

I haven't tutored for a bit but I have two new ACT students getting ready for the June test, so I'm headed out (in the rain  ) to meet up with them. Due to this, dinner must be quick and ready. I'm putting some rice on before I leave and DH can have that with chili or corn. I'm actually enjoying my dinner smoothies. For the first time, I'm using a protein powder and find them pretty filling. Last night was strawberry and banana and tonight will be a green smoothie. This one has avocado in it. Might be interesting.

My plan is to grill flank steak and make a couple of salads. Most likely a chopped cauliflower/grilled corn favorite and a Romaine and Arugula mix. The Romaine is locally grown so I'm no worried about the e-coli outbreak.
Between now and then I plan to take a trip to Ikea with DH and then either take a walk at the beach (my preference) or go on a hike (his choice).

Maybe baked chicken thighs. I've started keeping a food diary so when my numbers go up some, I can figure out what's causing it. I have an Advanced Nutrition class on Wednesday that I'm looking forward to attending with DH. Have a lovely Sunday everyone!

I have three hello fresh meals in my fridge. I need to cook them. Last night we just got pizza because I didn't want to stop painting. I can officially say I'm really over the painting at this point but there's still so much left to do. DS is in the process of taking off all my cabinet doors and hardware. I'm still drinking coffee but will start the painting soon.
I was kind of hoping I could get my BFF to pick up sushi and come visit me today

Leftover chicken minestrone soup I made last night--rotisserie chicken with Italian-style chopped tomatoes, broccoli, cauliflower, green beans, spinach, carrots, onion, chick peas and lots of garlic.

I’m grilling steak tips that I marinated this morning (soy sauce, sesame oil, brown sugar, ginger and garlic...shhh! don’t tell dh!!). Im make a huge batch of vegetable fried rice. I’ll split the vegetables between a cauliflower version for me and real rice for the others. I use broccoli, carrots, celery, snow peas, zucchini and sweet onion in the rice and top it with scallions. It’s one of my favorite dishes that I taught myself to Make!

Well, grandson decided he didn't want to go out to dinner on his birthday so we've been asked over again for a grilled steak dinner tonight. Let's see... dinner with the loves on Friday, carry out on Saturday, and dinner with the loves again on Sunday... I could get used to this no cooking thing!

My kids and nephew and his roommate are come by over to play whiffle ball and eat. I’m making steak,chicken & shrimp kebabs. Veggies with potatoes, mushrooms,peppers and onions, baked beans & dd is making a pasta salad.

Tonight's dinner will be from Dairy Queen. I have to run an errand and to do that, I go right past the DQ that also serves food. We are almost never out that direction otherwise, so it's a good excuse.
Last night's apricot chicken, btw: too much thyme in the recipe, and too much lemon (it just said juice and zest of one lemon, but they were all HUGE at the store; I bet I only need half of a big one). But the good news is that I liked how the chicken thighs were, texture-wise, after the crockpot. (I don't normally care for their texture otherwise.) So perhaps there are more crock pot chicken thigh recipes in my future.

Everyone’s dinners sound yummy tonight. I’m making turkey burgers seasoned Greek style with a big caprese salad that has cherry tomatoes, chickpeas, fresh mozzarella balls, cucumber, and avocado with a tomato vinaigrette.

We went to ds' university to bring home a load of stuff in preparation for him moving home in a week and a half. Today was his high school baseball team's annual fundraiser, so went to an early dinner at the restaurant where it was held. We are at point where dh and I don't know anyone except the coaches, but it was nice chatting with them!

My freezer is overflowing with chicken that I need to use, so dinner is Vietnamese style chicken fillets (thigh) cooked on the BBQ and left over fried rice. I have an Advanced Nutrition class on Wednesday that I'm looking forward to attending with DH. That sounds really interesting, I'd love to hear what you learn about in the class. I have Carrot Ginger Soup simmering on the stove. I add way more than a pinch of cayenne. I love it. That sounds really nice! I have a couple of carrot and ginger soup recipes that I have been meaning to try, but I think I like the sound of yours better.
