The ironic thing is that with all this "healthy" eating, people are sicker and more obese than they were a generation ago. I daresay it's not the "healthy" eaters that are sicker and more obese. Most likely the ones who live off of fast food and soda! You can be obese without soda or fast food, though. And you can be healthy with it. It's all about moderation. If someone is an over-eater, they can vastly over-eat "healthy"food and still be an unhealthy weight because of it. But if an overall healthy eater, who gets plenty of daily activity, and has no health issues wishes to have a random 7-Up or small fry once in awhile, they'll still be a healthy person. ![:)](//storage.proboards.com/5645536/images/MNrJDkDuSwqIMVw33MdD.jpg) Sometimes I think the reasons for so many food sensitivities has to do with a lack of moderation, many times that people don't even realize is happening. I often wonder if people are becoming ill due to fillers or inexpensive substitutes that are in so many of our foods these days. I mean, my grandfather, for instance....he wouldn't possibly have had a soy allergy, because there was likely no soy in his diet. But now, unless you eat a completely non-process diet, you are eating so much of it. Same with things like HFCS or artificial colors. unless you chose to avoid them, you are likely consuming a lot more of them than you realize. Even non-food items. people talk about anti-bac soaps being bad for people. Maybe if people only used them for specific purposes, such as someone in the home has the flu, but no, some people use them constantly. On their hands and their dishes. They even carry around anti-bac on little cutsie holders that attach to their purses. For someone with a compromised immune system, these products are a blessing to be sure. But on an everyday basis, we don't all need to be using them so much, kwim? We just seem to have this bad habit of inventing something that can be really cool or helpful but then we use it constantly, and then I start to wonder if that backfires on us.

There is a lot of speculation that GMO is causing much of the food allergy and sensitivity.

Me too. Why? I can't remember a single child or person with deadly nut or other serious allergies when I was growing up. I am sure they existed, but it was just mot overly shared. It was if something made you ill you did not eat it but also did not expect the entire environment to be altered to accommodate your needs. You dealt with it on a personal level. I get hives, severe shortness of breath and swelling from touching/eating shellfish. My family frequently ate these items, brought them in the house and to the table. My parents just told me not to touch or eat it and that was it. I have been in South Florida all my life and this is a staple in many peoples diets. When I go out with friends to a seafood place or any restaurant, I don't fuss about cross contamination. I can't live in a bubble and believe that if my parents mollycoddled me I would subconsciously convince myself into a reaction at just the sight of a mere shrimp. My S/O has had Celiac's disease since infancy and does not eat gluten free. If he is having "issues", he just controls his wheat intake. No disrespect intended. That part that I bolded in the above quote -- that's just plain stupid. If he truly has celiac disease, I mean diagnosed via an endoscopy with biopsy, then even if he's not having "issues" he is damaging his body. Stupid. -- And if he doesn't really have celiac disease -- just thinks he does because he has an "intolerance" to gluten sometimes, well then that's his choice. But he shouldn't be telling people he has celiac and then eating gluten. ugh. He was diagnosed as an infant and again as a older child. His parents were very careful and as he matured the symptoms decreased. He was told that can happen but it may get worse as he ages. His body, his choice. He does not go around discussing his health conditions and eats what he feels is appropriate for him to feel well.
