I’m making chili and I know people are pretty passionate about the right way to do so. What does in yours?
I usually add beans (mixed canned, plus canned black beans) but for some reason have 8 cans of chick peas and nothing else. So no beans tonight.
Ground beef, onion, garlic, green pepper, mushrooms, red and white onions, several types of canned tomatoes (crushed, diced, paste), and for spices I used chili powder, cumin, smoked paprika, s&p, white vinegar, and a bit of brown sugar.

I’m more of the mind of what does NOT go in my chili and that would be a bean of any sort.
Everything else I’m flexible with.

i'm a basic-chili kind of girl. ground beef with very little beans. the beans have to be mashed because their only purpose is as a thickener. then its the usual- tomato puree, onions, garlic, green pepper, cumin, chili pepper, paprika, salt and pepper.

A drop or two of liquid smoke and several beef bullion cubes.
ETA: In addition to what has been mentioned above. I also like to add some diced bell pepper and a half teaspoon of sugar.

Well, my answer won't be popular, but ... black and/or pinto beans, sweet potatoes, corn, roasted peppers (sweet and/or spicy), crushed and diced tomatoes, cumin, onion, garlic, chili powder, cayenne, salt and black pepper. Thicken with cornmeal in the spice mixture. A little splash of cider vinegar if it seems too sweet. No meat. Top with diced avocado, cilantro, crushed tortilla chips and minced onion.

refried beans and banana peppers, along with all the other basic stuff like ground beef, tomatoes, onion, garlic, Bush's hot beans, hot coffee, salt and pepper

I wish I had sweet potatoes here tonight but I’m the only one that eats them so i don’t keep them around regularly.

Ground beef, onion, celery, green & red bell pepper, garlic, diced tomatoes & tomato paste, navy, black & kidney beans, worcestershire sauce, beer; spices are chili powder, oregano, cumin, basil, paprika, cayenne pepper, S&P, and a bit of sugar. Seems like a lot but the results are worth it.

I make mine with quinoa, kidney beans, diced tomato, and corn. And then the regular diced white onion and spices. I have a recipe with sweet potatoes as well.

When I used to be able to eat it (before I became allergic to chicken, turkey, beef) I added to a basic recipe that had kidney beans and ground meat:
Cheddar cheese Salsa Green onion Tortilla chips

I have made Pressure Luck's chilli, and want to try and use the better than bullion chili base but can not find it to save my life.
MIL uses bacon, and tomato soup in her base. I also use tastefully simple's wahoo seasoning and a little cumin.

I'm making a black bean and sweet potato chili for my friend whose mother died recently. It needed to be vegetarian because her daughters are. In addition to the above, it's got ancho chili powder, chipotle in adobo, cumin, smoked paprika and salt and pepper for the spices. Plus onions and tomatoes--pretty simple.
If I'm making chili for DH and me, I use a variety of meats and beans, depending on my mood. I might add corn, but you'll never see green pepper because I don't like it cooked, and mushrooms have no business in chili.

2 tablespoons chili powder 2 cans of black beans (add more if you choose) 2 cans of pinto beans (add more if you choose) 2 cans red kidney beans (add more if you choose) 1 tablespoons salt 1 tablespoons dried oregano 1 tablespoons ground cumin 1 tablespoons ground black pepper 1/2 cup black strap molasses 1 teaspoon cilantro 2 cloves minced garlic olive oil 1 teaspoon thyme 1 bottle Guiness Extra Stout 1-2 quarts chicken stock (add more to make thinner) 4 15-oz cans Hunt's whole tomatoes 1 15-oz cans Hunt's tomato paste 4 pounds ground beef & 2 pounds ground Italian sausage 3 medium size onions, finely chopped 1 each green & red bell peppers, finely chopped De Arbol peppers Habenero peppers Chipolte peppers Pequin Peppers Chipotle Sauce - cook meat in
MIX ALL OF THE SPICES IN A BOWL WITH THE BEER UNTIL THERE ARE NO LUMPS. (very important to use a dark beer)
POUR THE STOCK INTO A POT AND ADD THE BEER/SPICE.
ADD ALL OF THE PEPPERS (NOT THE BELL PEPPERS), GARLIC, AND TOMATOES TO IT.
PUT THE OLIVE OIL IN A SKILLET AND BROWN THE MEAT IN IT. WHEN THE MEAT IS HALF COOKED ADD THE Chipotle Sauce.
PUT THE MEAT IN THE POT.
SAUTE THE ONIONS AND BELL PEPPERS.
ADD THE ONIONS AND BELL PEPPERS.
LET COOK FOR 2-6 HOURS.
The secret ingedient is the molasses. You cannot taste it, but it does something wonderful. Most hot chili loses its taste after the first few bites because of the burning. With this, you still get the burn, but it tastes great all the way through. People who don't like hot food eat my chili. People who HATE chili, each this chili.
Enjoy it because I spent 6 years making this.

Now, I LOVE beans and every batch of chili has any odd assortment. Black beans, pinto, cannellini, sometimes lentils, anything goes. No meat. Onions, pepper, jalapenos, garlic, stewed tomatoes, crushed tomatoes, cumin, chili powder, crushed red pepper and whatever else I grab. Sometimes that roasted frozen corn from Trader Joes. That is fabulous.

It's very good, and I use it frequently, but if you can't find it, Bush's Chili Hot Beans is a close second.

I usually make mine with ground beef, onion and garlic powder (because we almost never have actual onions or garlic in the house), paprika, cumin, chili powder, dried red pepper flakes, black pepper, brown sugar, vinegar, petite diced tomatoes, tomato sauce, tomato paste and an assortment of beans depending on what we have. It could be kidney beans (light and dark), mild chili beans with the sauce, pinto or great northern beans, black beans. No green peppers, celery or other stuff like that because the troops here don’t like that stuff in their chili. It’s served with a load of shredded Cojack cheese and a heaping spoonful of sour cream on top. DH likes his on top of a plate of rice but I think there are enough carbs in it to begin with. Oh, and of course a pan of fresh corn bread.

I use Laura in the Kitchen's recipe with minor modifications. It has beans which my husband likes. If I were only making it for me, I'd leave the beans out. I think what makes this chili so good is the Italian sausage in addition to ground beef.

Ha, famous last words. In our house, this chili would go down very well. I've never added sweet potatoes but no one batted an eye when I started adding jackfruit. Mine is simple and generic.
Ground beef Tomato sauce Chili beans (already seasoned) McCormick chili seasoning Sometimes, onion
Dump in the crockpot, and cook all day. Usually a Sunday so I’m home and can sneak bites of it in the afternoon as a snack, lol.
I like to add sour cream and cheese to eat mine.
My family devours it, as in no leftovers usually.

I love chili and am getting great ideas here! I admit, I thought chili was mostly about the beans, I had no idea others made it without beans. Now I want to make chili for dinner tomorrow! We will be out for hours at our daughter's university's football game tomorrow night, so we will eat chili to keep us warm.

I think dh and I are the only people that are not fans of chili. He has never liked it. I like my mom's ok and have made it once or twice over the years but it's not something I get excited about and I don't understand chili cook offs etc.

I always make mine exactly the same and I love it. I’d love to be able to replace the spice packet but I’ve given up. Nothing tastes the same.
