I eat a ton of chili, but I also eat lowish carb, so I usually leave the beans out (if I include them, it is 1 can stretched throughout a large recipe):
2 lbs ground beef lots and lots of onions, yellow and sometimes purple, too sometimes a few jalapenos or other hot peppers 2 fresh tomatoes 1 can of chili seasoned tomatoes sometimes 1 can of diced tomatoes 2 packets hot chili seasoning beef stock, as needed additional seasoning to taste (always more chili powder and onion salt)
I usually top with cheese and sour cream.

A long-ago boyfriend of mine was diabetic so to make chili more low carb he used mushrooms instead of beans. It was good, but I do like the beans in it. I don’t use a recipe, so it can be a little different each time, but mine always has ground beef and dark red kidney beans. I prefer it without tomato chunks and I don’t use crushed ones either, but I’ll use tomato juice as the base.

I like beans in my chili, and I am unapologetic about it. It is still preferable to the runny Skyline chili my DH loves. 29 years together and I still can't stand that stuff.

Ok, I guess I'm the total oddball, but I grew up on chili that has small diced potatoes in it, and to me, that's a necessity. Makes it a lovely completely meal My dad puts diced potatoes in his chili. I would love to make his (it's soooo good) but he doesn't share his recipe/instructions.

I love trying new chili recipes, much to the dismay of my family. Several years ago I found a chili recipe in Woman's Day that my family just loves. They get annoyed when I try a different recipe. This one needs time on the stovetop-- it's not an after-work kind of meal. It is delicious and smells amazing as it all comes together. Lick Your Lips ChiliIt has three kinds of beans and a ground turkey base. I sometimes add the prosciutto, but usually not. Love the chocolate and tomato juice. Yes, it may sound weird, but trust me, this is delicious. My picky kid actually asks for this. I serve it with our favorite cornbread: Extra moist cornbread with sour cream
