No mushrooms! Where did anyone ever get the idea mushrooms belong in chili? ha ha, whatever, eat it your way. Other than mushrooms, I make mine pretty similar to yours. Once in a while, I use stew beef instead of ground beef. Sometimes I add a can of beer, but that’s usually when I’m making it for other people. I don’t really like that beer flavor. I usually just use pinto beans in mine, or maybe kidney beans or red beans, whatever I have. But really, most of the time, I make chili rice (all cooked together) rather than regular chili with beans. It has a little soy sauce in it, and I love the flavor it adds. Wait, I’ll find the recipe. CHILI RICE 1 lb ground beef chopped onion & garlic salt & pepper 1 cup uncooked rice 1 can Rotel or regular diced tomatoes 2 cans water 1 small can tomato sauce or tomato paste 1/4 cup soy sauce 2 tbsp chili powder or to taste shredded cheddar cheese (or jack, whatever) Brown the ground beef with onion and garlic. Drain excess fat and add a little salt and pepper. Stir in remaining ingredients (except cheese), bring to a boil, reduce heat, cover and simmer for 20 minutes or until rice is done. Stir occasionally and add more water as needed. To serve, top with shredded cheese.

Well, my answer won't be popular, but ... black and/or pinto beans, sweet potatoes, corn, roasted peppers (sweet and/or spicy), crushed and diced tomatoes, cumin, onion, garlic, chili powder, cayenne, salt and black pepper. Thicken with cornmeal in the spice mixture. A little splash of cider vinegar if it seems too sweet. No meat. Top with diced avocado, cilantro, crushed tortilla chips and minced onion. Ha, famous last words. In our house, this chili would go down very well. I've never added sweet potatoes but no one batted an eye when I started adding jackfruit. I also squeeze lime on top when serving. Sorry, off topic but we have a new food hall here that has a Trinidadian place in it. They have a spicy coconut jackfruit dish that is the best thing I’ve tasted in forever. I haven’t had much luck using it myself. Will have to try again.

Pickles. or a splash of pickle juice. - dill, which is the only kind of pickle you'll find in my fridge, Largely b/c no one else in the house will eat them. I have made Pressure Luck's chilli, and want to try and use the better than bullion chili base but can not find it to save my life. MIL uses bacon, and tomato soup in her base. I also use tastefully simple's wahoo seasoning and a little cumin. I ordered the chili base off of Amazon. Love it!

DH makes an incredible vegan chili. I’m positive it includes mushrooms.
My chili has burger, onions, tomatoes & beans. Super easy and I love it. Chili is something I never tire of.

When I make chili I do not add any kind of tomatoes. I use stew meat and cook the meat in broth and add all the usual spices to the broth but no tomatoes, tomato paste or sauce. Husband is used to chili that way that was cooked over fire all day long and never any beans.

I love, love, love elaine 's chili! It uses Rotel tomatoes/chiles, unsweetened baking cocoa and a Penzeys chili blend. Yum! Elaine's Chili2 pounds ground beef 1 onion chopped 2 teaspoons garlic powder 4 tablespoons Chili 3000 (Penzeys spice blend) 1 heaping tablespoon of baking Cocoa (must be unsweetened) 1 teaspoon salt 1/4 teaspoon cayenne pepper 1/2 teaspoon ground black pepper 1 small can tomato paste 1 29 oz can tomato sauce 1 can Rotel tomatoes + chile peppers 2 cans Fire Roasted Diced Tomatoes 1 40(?) oz can Red Kidney Beans (not sure of exact size - it is the large can)- drained 1 15 oz can Pinto Beans - drained 1 15 oz can Black Beans - drained 1 cup beef broth or dark beer 1. Brown the ground beef. When beef is no longer pink, add the chopped onion and sauté until tender. 2. Mix in the dry spices and sauté another minute to be sure the beef is well seasoned. Add the tomato paste and mix well. 3. Add the tomato sauce, and all the cans of tomatoes and beans. Stir. Add the beef broth. 4. Lock the lid and set for 30 minutes at high pressure. It will take a while to come to pressure, since there is so much in the pot. Give it 15 minutes of natural release and then use quick release. Add salt and pepper to taste. **Above recipe uses an 8 quart Instant Pot. For a 6 quart, use 1.5 pounds of ground beef and 2x 15 oz cans of red kidney beans.

Well,
First you buy those huge dried chilis. Roast those. You can scrap some of the skin off... doesn’t bother me tho.
Chop up some onions. I like chunks of onions so no fine dice for me Chop up a couple of green peppers. Sauté this and add a healthy dose of garlic. Rough chop. I live cooked garlic. Sometimes I chop up elephant garlic.
The add your browned meat. Sometimes I use round steak chopped up. Don’t use ground white meat. Looks bad...like worms.
Mix that up.
Add your canned whole tomatoes. You grab a maters out of the can and squish as you drop in the pot. Save the juice.
Cook that mess down. Add your cumin, chili powder , salt. And ginger if you are using beans
Now I absolutely love the canned roasted jalapeños. Love them so I them. Added the dried peppers and a chili in adobos sauce. You only need one of those. Cook that for a bit. Add beans Add the tomatoe juice. Dump in a crock pot and cook all day.
This is better the next day.

This is my favorite chili recipe ever and the one I keep coming back to.I usually only use 2 pounds beef and often add 1 can black beans. It cooks in my crockpot all day.
2 1/2 pounds ground beef, cooked 1 medium red onion, chopped and divided 5 cloves garlic, minced 3 large ribs of celery, diced 1/4 cup pickled jalapeno slices 6 ounce can tomato paste 14.5 ounce can tomatoes and green chilies 14.5 ounce can stewed tomatoes 2 tablespoons Worcestershire sauce or Coconut Aminos (I use this brand) 4 tablespoons chili powder (I use this brand) 2 tablespoons cumin, mounded 2 teaspoons sea salt 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon oregano 1 teaspoon black pepper 1/2 teaspoon cayenne

I'm one of "those" who thinks it isn't chili without beans, and the more the better... So my "recipe" goes something like this: Ground beef, onion, crushed tomatoes, tomato paste, Chili powder, garlic powder, smoked paprika and 6-7 different cans/kinds of beans (Pinto, black, dark red, light red, chili, refried & northern). I have actually used garbanzos in it before, but they aren't my favorite.

But last time I made it in the Instant Pot and the recipe I used had cocoa powder in it. I didn't really notice a difference with it added. And of course, I didn't pin the recipe so I can't find it again!

I know that many eat chili without beans but I still can’t wrap my head around it - to me that would just be meat slush!! 😂. Chili is ground beef and beans - lots of both. I also add lots of onion and celery.

Well...beans definitely! But that said....I take the easy way out since no one in my family is any kind of gourmet. My chili is: -- 1 pound ground beef, sauteed -- add two cans of kidney beans -- one can of diced tomatoes -- packet of chili seasoning (like McCormick or whatever brand is on sale) Simmer for a bit, done. Sometimes I'll add a bit less meat and another can of beans. Sometimes I'll add an extra can of tomatoes. Top with cheese. In fact I'm making it tonight. Doubling the whole thing because my son will be here for a couple of days and we'll eat it tomorrow also.

Oooh, I just was thinking of how sacrilegious our European chili recipes must be! I made Jamie Oliver's veggie chili last week and only modified the beans (kidney beans + chickpeas instead of just kidney beans) and added a bit of balsamico vinegar before cooking the veg in the tomatoes:
It tastes good but apologies in advance to the American Peas! I shan't even dare mention we ate some of it tajine-style with couscous instead of rice...

Mine is simple and generic. Ground beef Tomato sauce Chili beans (already seasoned) McCormick chili seasoning Sometimes, onion Dump in the crockpot, and cook all day. Usually a Sunday so I’m home and can sneak bites of it in the afternoon as a snack, lol. I like to add sour cream and cheese to eat mine. My family devours it, as in no leftovers usually. This is pretty much my recipe, but I add kidney beans....

Ground beef Roasted poblano pepper Onion Chili powder Cumin Gobs of garlic Tomatoes Leftover salsa if I have some in the fridge
And then just cooked a while. It’s simple but always good. It’s so good in the pressure cooker which seems to really concentrate the flavors.
We eat it with cheese and sour cream.
I don’t like beans at all so I skip those.

For me, chili has to have beans. It’s incomprehensible otherwise. But I am not really a fan of ground meat so the beans are my favorite part. When I make it I either leave the meat out or I use small chunks of steak instead.

Ok, I guess I'm the total oddball, but I grew up on chili that has small diced potatoes in it, and to me, that's a necessity. Makes it a lovely completely meal
