Dinner is a great big mystery tonight. I am just not sure what to make. I'll see what the guys want and go from there. I'll update w/a dinner plan in a while. I'm completely stumped today.
What's on your menu?
Have a great day everyone.
ETA: Dh requested turkey panninis. That was easy. WTG dh!

Last night did not go as planned, so it was some frozen Tyson crispy chicken, tater tots and mac n cheese. Tonight will be french dip I made last week and put in the freezer. Probably more tater tots (I love those little things!)

last night I made Mississippi pot roast in the Instant Pot, it came out great. I normally crock pot it all day, but I didn't have time in the am..IP took 45 minutes and it came out great.
Tonight is chicken breasts in a jar of Trader Joe's Tikka Marsala sauce, some basmati rice and riata sauce.

My family likes leftovers, just not the following day. And not the day after that either. They prefer at least 2 days between. Unfortunately, some things can't be saved that long, so dinner tonight will be leftover buffet from the last two nights. I'm sure they'll be thrilled.

Still on my own for dinner... So the plan is an egg sandwich (fried egg with tomato and spinach, maybe a little avocado, between two slices of bread or a bagel). But I might end up just eating the eggs.
For some reason cooking for just me seems like so much more work than when I'm cooking for both SO and myself.

Well, I wanted to make chicken soup tonight. But I made little individual chicken and pasta casseroles last night (7yo hated it) (natch) and I'm committed to making PW chicken spaghetti tomorrow, so no. So it's going to be cheeseburgers. I'd better go take the buns out of the freezer now. And maybe salad. I made salad last night (I usually don't, I prefer cooked vegetables) and the 7yo ate three helpings, while refusing to eat chicken and pasta, of course. (In desperation, I picked the chicken out of his and put it in his salad. He ate it.) He'd better eat a frickin' cheeseburger tonight. Last month he loved them. grrrrr

Since I had rice krispie treats and instant breakfast for dinner/lunch for supper/dinner I have no idea. Last night we had bbqed hot dogs and tator tots in the air fryer, not so healthy but it was a good quick meal for another hot night. Tonight might be bean soup with sausage cooked in the pressure cooker. Or it might be something else it just depends on what jumps out of the freezer when I walk in after work. I really should start planning the weeks worth of meals on Sunday again so I know ahead of time what to fix and then just do it. LOL!

I have a roast in the crock pot for French dip sandwiches.
It was a thing that showed up in my FB feed. Since the boy loves French dip sandwiches and it was nothing more than dumping everything in the crock pot, it fit the bill. If it turns out, I want to try it in the pressure cooker.
It's a roast, a can of beef consume, and a can of French Onion soup. It's been in there for 10 hours, so far. The video didn't give times. So, I'm guessing.

lucyg...what kind of pasta thing? I am looking for things that are small, individual portions that I can freeze... Some kind of pasta. A little alfredo sauce (from a jar) and ... probably green beans. I am not eating well the last week or so (or at least by sanctimommy standards ) since everything lately seems to be coming out of jars and cans.

Well, it appears as though I am late to the party. My 767-month-old dh grilled some chicken and his 778-month-old wife (emphasis on OLD) made fresh green beans and multi-grain rolls. Delicious.
Thanks for the thread hahahahahahahahahahahaha!
