New thread!
Tonight I created a new recipe for dinner - I'll post the details when I get done writing them up. It was Balsamic Cranberry Chicken Thighs in the Instant Pot. I had chicken thighs in the freezer and none of the complete set of ingredients for any of my recipes, so I decided to make one using the ingredients I found in the pantry. It turned out to be a keeper.

That sounds good, I will give it a try when you post it. I made a venison stew this morning before work. (venison, onion, potato, carrot, broth, tomato paste, pomegranate juice, bay leaf and rosemary.) It's so nice to have it done in the morning. It's sometimes almost 7 before we get home and the kids are climbing the walls and like, trying to chew their arms off in hunger. It takes just a couple of minutes to reheat. I am going to try pork carnitas I think tomorrow. I have never made them before.

Formthose interested, Here is the link to my Balsamic Cranberry Chicken Thighs. It will be a good way to use up any leftover cans of cranberry sauce after Thanksgiving.

I'm going to poke around and see if I can do mashed potatoes in advance in the IP. I would want to put them in the oven on thanksgiving, so they don't taste like leftover reheated mashed potatoes.

I made chicken Adobo in mine again. It has become a favorite and I had never heard of it before I got my IP.
I had originally named my IP Mrs. Potts (I even cut a cute vinyl pic for her), but DH didn't like it. He said the IP reminded him of the pother Aunt Beru uses in Star Wars. So, she has been renamed (and new vinyl cut, that stuff is a pain to remove!) ...she is now Aunt Beru. It's hilarious hearing DH about making dinner in Aunt Beru.

I made the meatballs in tomato sauce from Hip Pressure Cooking last night. So, so good! The night before it was the pot roast from Frieda Loves Bread. Another winner!

I'm doing honey garlic chicken tonight. I cheated and bought the VH cooking sauce because I'm hosting a girls' night and want something easy.
I will serve it with rice and fresh broccoli.

My son came home for a few days, arrived in the middle of the night last night. So we're standing in the kitchen talking while I'm making some of those small round potatoes to have with burgers for dinner. Five minutes in the pressure cooker. We hadn't even moved on to another topic of conversation when I had the potatoes cooked and in a bowl on the stove. Then I tossed in some frozen green beans using the strainer basket I'd just taken the potatoes out of. Two minutes. Then I started a batch of boiled peanuts with one of the bags of raw peanuts that he brought from Georgia. Those take 75 minutes plus NPR so they're still in there. Ds laughed and was amazed at the potatoes and green beans in the time it took for us to discuss one subject. He asked me when was the last time I'd used the stove top. um.... I had no idea. hahahaha Also...I made carrot soup the other day which was fabulous. I will copy down the recipe a bit later. It's a great way to use up leftover carrots. I don't really like raw carrots unless I have something fattening to dip them in like peanut butter, and I definitely don't like cooked carrots unless they're in a stew or soup. I made chicken noodle soup (also fantastic) with some of the carrots and had half a bag left. So that's why I did the carrot soup. I wish this pressure cooker had been in my life when my kids were younger.

I made Coconut Soup from the Great Big Pressure Cooker Cookbook for dinner tonight - YUM! It is a Thai style chicken soup. I found this helpful information chart at hippressurecooking.com. For anyone here still sitting on the fence, and for those of you trying to convince family members of the wonders of pressure cooking, take a look at this and share.

Tonight I made tuna casserole (no cream soup) using the pressure cooker and the oven. It could have been done in the pc only but we like the crispy cracker topping from baking in the oven. Normally I use 2 pans plus a baking dish so this was definitely better.

No one else is home and pre-IP I would NEVER have cooked for just myself. OMG! This looks amazing! My mouth is watering. Yesterday, my 8 at IP had quite the workout. I started yogurt in it at bedtime the night before and it was ready to strain at 8 am. Then at noon I made a huge pot of my roasted veggie soup (0 smartpoints). Then, for dinner I made Curried Lamb w/Artichoke Hearts and Chickpeas. No leftovers! It was a busy pressure-cooker day. Tonight I'm just going to throw in some chicken chunks (brown them first) and a bottle of garlic teriyaki glaze and call that the main course. Lots of cooking to be done over the next few days.

When I was 12 we moved to a naval base town and there was a lot of Filipino families. First time I had it I thought it was the greatest thing ever. I buy Coconut vinegar from an Asian market specifically to make adobo. The IP was seriously made for making chicken adobo. So easy!

So, my FIL gave us money already to purchase our own gifts from him. He doesn't want to shop so this was his solution. We decided to split it four ways and get the kids some of the more expensive gifts that we were going to have to pass on and then DH and I would buy stuff we wanted ourselves. I just placed an order for Hip Pressure cooking and The instant pot cookbook. They should be here by Friday lol Oh and off topic, I was passing my fave shoe store in the mall yesterday and the Doc Marten's I have wanted for over a year were on sale for 49.00 (reg 189.99) so I went in figuring I could grab them with my Christmas money from FIL. Well it was meant to be because they were the last pair left and in my size!! Woot.

Thanks elaine. The recipe I followed did not say to cover, but I remember seeing some of the other ones linked here that were covered. Would you add more time if it was covered? The recipe call for 15 (up to 25 min for denser) high pressure on manual. Because I didn't think of it until the last minute, I followed the recipe and put it in uncovered. Will let you know how it turns out. It did say to pat off any water on top with a paper towel, which I did. It's still cooling on my counter.

I made a big pot of beef broth today. I may make another tomorrow as well. I bought a 6 lb bag of beef bones from a local farmer for $3 and I only used 1/2 to make the first batch of broth. It's great for soups and we add a couple of spoonfuls to the dog's kibble. They love it and it all natural and yummy.
