Today I've made: breakfast -- steel cut oats with a chopped apple lunch -- mac and cheese (again... ), and before the mac and cheese I experimented with a zucchini -- 0 minutes in a pot that was already hot, then QR, perfect. So I had mac and cheese, and zucchini for lunch. Now I have a bag of raw peanuts in there for boiled peanuts. That will be a snack with a beer for when dh and I watch Jeopardy later. And dinner is leftover butternut squash soup from last night.

We are making lemon garlic chicken tonight, for our second IP meal ever. I'm assuming with frozen chicken breasts you skip the browning/saute step? Oh, I'd definitely still brown them. You can brown frozen pieces of meat or veggies.

I just bought one on the black friday sale on Amazon. I am so overwhelmed by the idea of using it I haven't even cracked the box open. So, what would you all suggest as my first thing? I was thinking maybe boiled eggs. Hard-boiled eggs, or chicken pieces with a bottle of sauce, or one pot pasta/sauce/meatballs or sausage.

The insta pot I got on Black Friday for DH for Christmas (he loves to cook) came today and he saw it before I managed to hide it... So it is now all unboxed and sitting on the counter intimidating us. I have a dozen thawed chicken legs and a jar of bbq sauce for dinner tomorrow. Can we do them in it and if so how? We have no idea how to use this thing. Put a little bit of oil in the bottom, or spray with non-stick cooking spray. First, set it on saute "more". Brown the legs. If you need to, do it in batches. Put all the browned legs back in along with any juices that gathered on the plate. Then, pour the jar of BBQ sauce over them. Close the lid. Be sure the valve is in the correct/closed position. Hit "manual" - the default will be high pressure - and then use the + /- buttons to set the time to 10 minutes (the default the first time will be 30). When it it comes up to pressure, it will start counting down from 10. When it is done, it will beep. Use quick release - just move the valve to open/steam and steam will pour out. When the safety pin drops down - it will take a couple of minutes- you can open the lid. You can either eat them just like that, or, if you want them a little crispy, you can put them on a baking sheet and put them under broiler and carmelize the sauce a bit, but watch closely so they don't burn. We did this tonight... Our first time using it. It was a hit and all during dinner DH kept brainstorming other ways to use it. He know wants to claim my island (kinda of our staging area for things coming and going) for his air fryer, instant pot and a second one eventually.

I have a question--I've made while chicken in the pressure cooker before and usually just set it in the liquid. However, I'm wondering how it would turn out if I put it on some kind of stand so it wasn't directly in the liquid? Has anyone done that?

I used the rack that came with my PC. My DH swore it was the best chicken he's ever had! It was from Miss Vickie's pressure cooker cookbook. Called Stuffed Chicken Breasts. Mmmmmm!

Soooooooo ... I've had my stove top pressure cooker for years. I've loved and used the heck out of it! Early electric pressure cookers weren't highly rated so, I've waited.
It seems like Instant Pot has gotten it right. And then, the Peas enabled me! LOL When they went on sale for $68 I just had to order one! LOL
It came in the mail on Monday and I finally got a chance to use it last night! It was awesome!
I made meatloaf in it and then mashed potatoes in my stove top.
We had my SIL and her BF over for dinner and she was amazed that I mad such a great dinner so quickly. (Me too!)
I cooked the meatloaf over a beef broth I made from beef base. Then once the meatloaf was done, I stirred in corn starch to make brown gravy. Mmmmmmmmm!!!
Clean-up was easy. Can't wait to use it some more!

styxgirl , I'm happy to hear that you are happy about expanding your pressure cooker arsenal to include an IP! it is an addictive device - especially since clean up is so easy. Your meatloaf sounds wonderful.
