I'm making pasta alla Toscana tonight. It's a pasta dish I learned how to make at one of the Italian cooking classes I went to. It has Italian sausage, yellow and red peppers, red onion, mushrooms, olive oil, Parmesan and is mixed with cooked penne.
We finish it at the table with a chili infused olive oil. I'm making garlic toast and chopped green salad with it. I spent the afternoon in the kitchen making French coconut cream bars so we have dessert too. What's on your menu tonight?

I'm making a spicy chicken stir fry with colorful peppers and onions. It's one of the family's favorites so I am making plenty for seconds and maybe leftovers for lunch tomorrow. I serve if on a bed of my garlic and onion infused rice. It's delish!!

Wow- your dinner sounds amazing. I roasted a chicken this morning and will throw some on top of a salad when we get hungry. I lovge roasting chickens on sunday though- we eat the chicken for lunches during the week in quesadillas or salads.

We are having pulled pork that I made in the crockpot. We have decided that the Pioneer Women's recipe is the best. I then cheated and went to the store and bought some salads.

I think yours sounds more delicious though. My favourite meals include pasta or rice - oh and salmon - the teryaki with rice sounds wonderful but the kids don't like fish. It's the sort of thing I would do on a Saturday night though for me and DH.

Your menus are always inspiring Akathy! I just made this for lunch: Barefoot Contessa Lobster Pasta Salad
I use the Langostino they carry at Costco instead of Lobster. Yum! Meatloaf, salad and corn on the cob for dinner, mixed berries with whipped cream for dessert.

I just came home from a baby shower and they served a full meal there. There were salads, deviled eggs, meatballs, veggie/dip, cold cuts, rolls, and of course, cake.
No cooking for me tonight.

Lots of yummy dinner ideas! We're having a pork loin roasted with onions, carrots, and red potatoes. I'll make a salad to go with it. It's going to be a late dinner, though, because I took a nap this afternoon.

For Eddy and Harley ![:)](//storage.proboards.com/5645536/images/MNrJDkDuSwqIMVw33MdD.jpg) Pasta Alla Toscana 1 lb. penne pasta, cooked according to directions and drained well 2 package mushrooms, sliced (I use one and then add a jar of sun dried tomatoes, chopped) 1 small red onion, sliced 1 red pepper, sliced 1 yellow pepper, sliced 2 cloves garlic, chopped 1 package Italian sausage (sweet or hot) remove casings and crumble 2 Tbsp. fresh parsley, chopped Extra virgin olive oil salt & pepper parmesan cheese (about 1/2 cup
* In large skillet over medium high heat, brown sausage in EVOO until golden brown, breaking it up as it browns. When cooked through, set aside. On medium heat add more EVOO and sauté peppers, mushrooms, garlic and onion until tender. Add sausage to veggies (and sun dried tomatoes if you're using them) and cook a couple minutes. Add more EVOO if dry and then stir in fresh parsley. Add pasta to sausage mixture and stir in a good handful of fresh grated Parmesan. Stir well and serve with extra Parmesan and chili infused EVOO.
(ETA: The "sauce" is the EVOO and Parmesan mixture, it's not really saucy though.)
